Zucchini with Lemon-Basil Dressing

"I have a 'stragglers Thanksgiving' — that's what I call it — at my house every year," writes Frances Teasley of North Hollywood, California. "I know a lot of people who, like me, don't have any family nearby. Thirteen years ago I started inviting a few people for dinner. And that small holiday gathering has become a big tradition among my friends. For weekday meals, I look for shortcuts and do-aheads. But for holiday meals, I like to do everything the same day because I love the smell of cooking that fills the house." Nice, fresh flavors for a side dish or salad.

Roasted Red Peppers with Garlic

Once roasted, the peppers are gently simmered with Sherry wine vinegar and garlic.

Italian Coleslaw with Fennel and Capers

Wonderful as a side dish with grilled sea bass, halibut, or marinated, skewered shrimp.

Emilia's Tomato Sauce

Salsa di Pomodoro d'Emilia Emilia would add a sprig of basil or rosemary or a glass of red wine along with the tomatoes, according to her mood. The sauce always turned out a bit differently, yet it was always delicious.

Griddled Tomato-Chipotle Salsa

This is another wonderful all-purpose salsa. It goes particularly well with eggs and any dish containing black beans. The essential technique in this recipe is the blackening of the tomatoes. That and the chipotle chile give the salsa its deep, smoky flavor.

Three Pea Stir-Fry

It may seem odd that we use frozen green peas, but, sadly, even the best fresh ones can taste starchy by the time they make it to the supermarket. Active time: 30 min Start to finish: 30 min

Cantaloupe Curls with Spiced Wine

An old-school ice cream scoop turns out beautiful curls of melon; the pink peppercorn and bay–infused wine syrup keeps things interesting.

Cherry Tomatoes and Cucumber Spears with Spiced Salt

Active time: 10 min Start to finish: 20 min

Spicy Ginger Vinaigrette

This Asian-inspired vinaigrette is a lively dressing for seafood salads as well as simple greens. Can be prepared in 45 minutes or less.

Trio of Salads

A traditional French assiette crudités (raw vegetable salad) just like those served all over Paris.

Zucchini, Onion and Tomato Salad with Saffron and Cinnamon

A nice accompaniment to grilled sea bass, scallops or shrimp.

Oven-Fried Potato Chips with Thyme

Can be prepared in 45 minutes or less.

Honey Vanilla Poached Apricots

Can be prepared in 45 minutes or less.

Tomato and Herb Salad

Can be prepared in 45 minutes or less.

Watermelon-Honeydew Kebabs with Lime-Poppy Seed Dressing

Most kids will like the dressing, but you might want to put it on the side just in case. Serve pink lemonade to the kids; the grown-ups might prefer iced tea or sangria.
