Roast Lamb with Mint, Cumin, and Roast Carrots
Young carrots, no thicker than a finger and often not much longer, appear in the shops in late spring, their bushy leaves intact. Often, they have a just-picked air about them, their tiny side roots, as fine as hair, still fresh and crisp. At this stage they lack the fiber needed to grate well, and boiling does them few favors. They roast sweetly, especially when tucked under the roast. The savory meat juices form a glossy coat that turns the carrot into a delectable little morsel. I have used a leg of lamb here but in fact any cut would work—a shoulder or loin, for instance. The spice rub also works for chicken.
Watercress with Roasted Enoki Mushrooms and Peas
Enoki mushrooms are also known as “snowpuffs” or “golden needle” mushrooms because of their long, stretched stems and white caps. They come to us from Japan, where they are served raw or lightly cooked. Enoki are usually sold refrigerated in sealed plastic packets of 3.5 to 7 ounces. Despite their delicate appearance, they have a surprisingly meaty texture, especially when roasted. Mirin, or rice wine, is a sweet Japanese cooking wine that has a low alcohol content. If you can’t find mirin, substitute a tablespoon of honey mixed with a drop of white wine.
Grape and Ginger–Glazed Chicken
Fresh local grapes are an uncelebrated fall fruit, mostly because of their chewy skin and intrusive seeds. But grapes that aren’t ideal for snacking can be more fragrant and sweet than table grapes, and their acidity balances pleasingly with rich roasted chicken. Choose from any white, green, or red variety that’s native to your region. Depending on their sweetness, adjust the amount of honey in the recipe. You may use bottled, unsweetened white grape juice instead of fresh grapes. For a comforting cold-weather meal, serve with Watercress Mashed Potatoes (page 185) and Sweet Potato and Cranberry Cornmeal Biscuits (page 189).
Roasted Fennel Stuffed with White Beans and Chestnuts
This is a festive entrée for a holiday dinner. The aromatic vegetable stock is made right in the baking dish as the fennel cooks, and then turned into a rich sauce. The trick to carving out the fennel bulbs is to leave the sturdy outer layers intact, no less than 1/2 inch thick, or the bulbs can fall apart. If you like, you can mince half of the fennel scraps and add them to the filling. If you can’t find chestnuts, substitute toasted walnuts. Serve with a light, fluffy grain like rice or quinoa.
Corn on the Cob with Parmigiano-Reggiano
Long hot Southern summers produce delicious corn, but some of the best corn I ever had in my life was from New Jersey. The farmer had a stand on the side of the road in front of his cornfield. He would ask how many you wanted, and march back into the green, rustling stalks to pick your order. Freshness is important, since the moment corn is picked, the sugars begin converting into starch. Straight from the row to a pot of boiling water is an indulgent luxury. Some folks may look twice when they see that this recipe instructs you to coat the corn in mayonnaise. It’s a Southern take on Mexican corn that is coated in crema, a soft sour cream–like cheese. You cannot get more Southern than mayonnaise. If you don’t care for mayonnaise, use soft unsalted butter instead.
Bay Roasted Potatoes
The bay tree at La Varenne is a monster, more than twenty feet tall. There’s a niche or cubbyhole on one side, the side that everyone approaches to cut fresh leaves for classes. I implore my students to discard the jars of brown, tasteless dried bay leaves in their pantries: even a semi-fresh bay leaf several weeks old from the fridge will have more flavor.
Mama’s Orange Glazed Cornish Game Hens
Cornish game hens (or Rock Cornish hens) are not as large as a chicken, yet larger than a quail. The French call them poussins, and they are essentially baby chickens. Mama has always cooked game hens for semi-special occasions since we all love them. They are great for a dinner party, too. Plan ahead, however; many grocery stores only sell them frozen. The safest way to defrost meat is in the refrigerator overnight or in the sink under cold running water. Bacteria thrive when food is between 41° and 140°F. So, you can imagine how appalled I am recalling how my mother, not knowing any better at the time, would defrost these hens, as well as chicken and hamburger meat, on the windowsill in the bright sunshine. It is amazing we never got sick (she knows better, now). Or maybe the early exposure just built up our resistance to food-borne bacteria.
Mama’s Quail in Red Wine Sauce
Quail and dove shoots are still serious Southern rituals, and my father always hunted when I was growing up. Quail meat is darker than that of dove, which has a tendency to be dry. While I don’t shoot often anymore, I do love to reap the rewards from my friends and relatives who hunt. I can hardly eat or cook quail without thinking about a dinner party Mama hosted when I was young. She was frying the quail and her hand was splashed with hot grease. Instead of going to the hospital, she sat with her hand in a bowl of ice water in her lap under the table so as not to disturb her guests. Some people might think that was incredibly stupid, but all I can think about is her amazing hospitality and selflessness. Mama and I have laughed about it in later years, because the unexpected bonus is she has no age spots on that hand.
Meme’s Roast Turkey and Giblet Gravy
The first time Mama and I brined a turkey, it was a revelation. The bird emerged from the oven glistening and a rich, golden brown, like the glorious totemic beast from the Rockwell painting. Meme didn’t brine her bird, so I have taken a little liberty with this recipe. Let’s just say it’s the spirit of Meme with a dash of revised technique. We have never stuffed the bird in our family, but if the turkey is stuffed, make sure the temperature reaches 160°F in the center of the stuffing. When the stuffed turkey is done, remove it from the oven and let the turkey with stuffing stand for 15 minutes. This standing time allows the stuffing temperature to climb to 165°F, for an added measure of safety.
Herb Roast Chicken with Pan Sauce
Meme washed her chickens inside and out before cooking them, removing every last bit of fat, overlooked feathers, and any bruises, blemishes, or blood spots. She said if you didn’t, it tasted too “chickeny.” That bird was sanitized—or so she thought. I would never argue with Meme, but according to the USDA, washing chicken is not necessary. If the bird is contaminated, dangerous bacteria are not going to be affected by cold tap water. Washing the chicken actually increases the chance of cross-contamination; water that has touched raw chicken and splashed into the sink can potentially contaminate other food. This recipe relies on a classic French preparation: stuffing the bird with aromatics, roasting it to perfection, and using the pan juices plus added shallots, wine, and stock to make a light sauce. There’s not a lot to cloud the plate or palate or mask a mistake. I will often order chicken, seemingly the most boring dish on the menu, when trying a new restaurant. Simple roast chicken is the test of a good cook. Herbes de Provence, used here, is a mixture of dried herbs that typically contains some of the following: basil, cracked fennel, rosemary, sage, thyme, marjoram, lavender, and savory.
Tarragon Chicken Salad
Chicken salad is one of my all-time favorite dishes. It’s good mounded in a butter lettuce cup or spread between two slices of whole wheat bread. Many recipes call for poached chicken. Years ago, when trying to replicate the famous chicken salad then sold at Zabar’s, the renowned food market on New York’s Upper West Side, I tried roasting the chicken at a low temperature on the bone. When meat, any meat, is cooked on the bone, it is more tender and juicy. I still do not know whether this is how Zabar’s did it, but it is delicious and wonderfully simple.
Mustard-Crusted Pork Loin with Herb Pan Sauce
After a couple of decades advertising pork as “the other white meat,” during which pork chops become as lean as chicken, a new type of fattier, richer-tasting pork is finally infiltrating the butcher’s case and restaurant menus. This “new” pork is from older breeds not suited for large-scale intensive farming, so it’s mostly raised by small farmers who use natural farming methods and fewer antibiotics, and allow the pigs to roam freely. This heritage-heirloom-rare breed-pedigreed pork tends to be darker and redder than conventional supermarket pork. Look for it at your local farmer’s market or CSA (Community Supported Agriculture program), online, or at gourmet markets. Regardless of whether you use heirloom or traditionally farmed pork, it is important not to overcook the loin, a fairly lean cut of meat. Be sure to use an instant-read thermometer to gauge the internal temperature.
Roasted Beet Salad with Walnuts and Walnut Oil
These beets are roasted, and very delicious! But if you have a mandoline, a professional tool that will slice vegetables evenly and very thinly, skip the roasting process and slice the beets raw (this works only with beets at the peak of seasonal freshness—sweet, dry, and tender). When really fresh beets are sliced so thin as to be almost shaved, there is no need to cook them. Toasted walnut oil adds a classic French flavor to the salad, but you could also use almond or pecan oil, available online and at gourmet or specialty markets. Store nut oils in the refrigerator; they turn rancid fairly quickly.
Arugula with Roasted Pears and Goat Cheese
Not that long ago, for most of America, “cheese” meant pre-sliced singles wrapped in plastic, or insipidly flavored orange wheels produced in America’s heartland. Any cheeses considered “gourmet” were imported from Europe. Fortunately, artisanal cheesemaking is now thriving all over the country, including the South. I love the fresh goat cheese from the Wehner family’s Green Hill Dairy and Sweet Grass Dairy in Thomasville, Georgia. Their cows and goats roam freely in the woods and graze in lush, green pastures. This idyllic existence, the family maintains, makes them so content that they produce the most delicious milk, which, in turn, makes the best cheese. Sweet, roasted Bosc pears, tender baby arugula, and mild creamy goat cheese make this simple, elegant salad sing.
Roasted Tomato Salsa
This recipe is an updated version of the classic cooked Mexican tomato sauce, which is made with vegetable purees and simmered on the stove. My version roasts the vegetables in the oven, allowing them to caramelize, before they are pureed. The result is a sauce with deep rich flavor and a hint of sweetness. If you don’t like heat, make sure to remove the seeds from the jalapeño!
Roasted Chiles, Onions & Tomatoes
Roasting—or rather toasting—vegetables is one of the most important techniques in Mexican cooking. Because the roasting is done on the stovetop and not in the oven where the vegetables can steam, the flavors developed are very deep. Make sure to include some charred pieces of vegetable skin—they will add an incredible smoky flavor to your recipes.
Chile-Smothered Spareribs
The most difficult part of making these ribs is waiting for them to be ready. And the best part is that they practically make themselves. It is said that ribs should be cooked low and slow, and this recipe does just that. Cumin, oregano, and chipotle chiles slowly infuse into the meat of these ribs for 3 hours before they are glazed with honey and adobo. A winning combination!
Roasted Chicken with Parsley Potatoes and Asparagus
I know that a 4-pound chicken is more than you need for two people, but if the point is to impress your date, you don’t want to serve a scrawny little chicken. This dinner is delicious and easy to prepare, so if you are a novice, this is a fine place to start. Working with a whole chicken for the first time can be an intimidating experience, but actually there’s nothing to it. The fresh parsley and rosemary turn these all-time favorite standards—chicken and potatoes—into a sophisticated dinner.
Taco Salad
Taco Salad is awesome because it is literally a whole meal in one salad—and a vegetarian meal at that. If you want to add meat to the salad, you can cook and drain 1 pound of ground beef, stir in 1 tablespoon of chile powder, and spoon it onto the salad before you add the cheese. Tortilla shell bowls can be difficult to find, but you can just line a bowl with tortilla chips and get the same effect.
Roasted Banana Ice Cream
Bill Fujimoto, the produce expert at Monterey Market in Berkeley, grew up in Japan. He once told me about the produce market where his father worked, which featured a wall covered with tarantulas, each individually nailed in place. In days past, native islanders would hoist bunches of bananas onto ships heading landward, and the bananas would sometimes include a little something extra from the jungle lurking beneath the stem. Sometimes people would bring home bananas only to discover an unwelcome houseguest the next day, enjoying a morning stroll across the kitchen counter. In spite of their risky reputation, bananas have become the most popular, and least intimidating, fruit in America. I’ve eaten more than my fair share and have yet to see any hazardous signs of life. (But that doesn’t mean I don’t take a peek every now and then.) Roasting bananas in butter and brown sugar gives them a deep, rich butterscotch flavor, which enhances their abundant natural sweetness.
