Cabbage Pie

Savory pies are favorites in Russia, and cabbage pie is the most common. I have not been there, but my friend Jacqueline Mitchell has, and she returned with this, certainly the easiest cabbage pie ever. I think it is best suited as an appetizer or a snack, but it’s an odd dish, good hot or at room temperature, mysteriously simple, and quite glorious when it’s done. Other vegetables you can prepare this way: any cabbage (red will not look too great, though it will taste fine), including Savoy and Napa.

Torta di Melanzane

This may be called a torte, sformata, crostata, teglia, or quiche, not to mention a dozen other names in different countries, mostly Mediterranean. They all begin with a simple pie shell and a pile of cooked vegetables (and sometimes meat). (The recipe will take less time if you have a premade crust.) Cheese, eggs, or other enriching ingredients may be added. The result may be a first course, a light lunch, or the centerpiece of a larger meal. You can also use any of these mixtures to make a crustless “torte”—see the variation. Other vegetables you can prepare this way: zucchini or summer squash may be substituted for the eggplant.

Baked Cod or Other Fillets with Dried Mushroom Sauce

Remember fish dishes baked with canned cream of mushroom soup? This is the original, and you may not believe how good it is. Never buy dried porcini in the tiny packages sold at stores. A package should contain at least an ounce, and the mushrooms should look like mushrooms, not powder. Given that you can buy a pound of dried porcini for as little as $25 (look on the Internet), you should expect to pay no more than $5 for an ounce. Serve this with buttered rice or noodles.

Braised Endives

Endives have a couple of things going for them: they’re grown inside (mostly in the dark, so they stay white), so they’re fresh all year round; they have great form and nice crunchy texture; they are unusually bitter, but in a pleasant way. Cooked—especially with good stock—they are elegant and delicious. Other vegetables you can prepare this way: leeks (split and washed), romaine lettuce (quartered, the long way), or any root vegetable—especially carrots.

Red Snapper or Other Fish Fillets in Paprika Sour Cream

Sour cream sauce is standard throughout Eastern Europe, and it’s not as bland as you might think or as you might have experienced. The dish should be quite sour, for one thing, and a bit hot—if your paprika has little flavor, either buy a new supply or spike it with cayenne—and it should be finished with fresh herbs. Serve this over rice or buttered noodles or with crusty bread.

Cod Poached in Cider

The ideal fish for this Norman preparation is Dover sole—the real thing, a fish with great flavor and unmatched texture. But this isn’t an ideal world—you’re unlikely to find Dover sole and equally unlikely to want to pay the asking price if you do. Fortunately, cod is a good substitute. In fact, as long as you don’t overcook it, it’s fantastic here. Any firm but not tough white fillet will also work: red snapper and black sea bass are excellent choices. If you can pick up mussels at the same time, by all means go for the variation; the broth and overall results will be improved markedly. In Normandy, this would inevitably be accompanied by a potato gratin like the one on page 482 and, if you were lucky, a salad.

Monkfish or Other Fillets with Artichokes

I had this dish in Genoa, which is near Albenga, a part of Liguria best known for its artichokes. All the work is in preparing the artichokes, and the results are fantastic. In true Ligurian fashion, you might begin this meal with Pasta with White Clam Sauce (page 99) or Pansotti (page 550).

Torta di Porri

Somewhat more elegant than its more famous French cousin, which is featured in the variation. Good hot, perhaps even better warm or at room temperature, this is an ideal buffet or picnic preparation. Like the eggplant pie on page 459, this may be prepared without a crust. Other vegetables you can prepare this way: onions of any type.

Monkfish or Other Fillets in Almond Sauce

Almonds grow abundantly in Spain—you see the trees throughout the South and easily find fresh almonds, which are a rarity here—and play an integral role in many dishes, offering a rich flavor and body to sauces. This dish is a perfect weeknight offering, but it’s also a fine main course at a dinner party. I like monkfish here, but striped bass, grouper, red snapper, and black sea bass are all suitable; each will cook at slightly varying rates (the monkfish will take the most time, red snapper the least). This is wonderful over either white rice or a pilaf (page 513) or with crusty bread.

Fish Tagine

An easy fish stew with exotic flavors. You can make the same style dish using chicken thighs in place of the fish; just boost the oven temperature to 400°F and increase the cooking time by 15 minutes or so. This is great served with couscous (page 526), bread, or rice.

Onion Gratin

A simple and delicious way to use onions as a vegetable, one that long ago became part of the Middle American repertoire but has sadly dropped out. Time for a revival? This dish is unquestionably best with small onions—pearl onions—or with cipollini, the squat Italian variety, or the very fresh spring onions, usually sold only at that time of year and looking like scallions on steroids. It will work almost as well with leeks, which should be trimmed first, then parboiled for 2 or 3 minutes. If you must use larger onions, parboil for a good 10 minutes before peeling and baking. Convert this to a gorgeous spring gratin by adding a handful each of fresh wild mushrooms, like morels, and fresh peas to the mix. Other vegetables you can prepare this way: shallots, treated exactly as you would pearl onions.

Potatoes with Bay Leaves

Amazing how minor touches in familiar dishes can make such a huge difference. Anyone who grew up eating baked potatoes with butter and sour cream will be pleased and surprised at how aromatic and delicate these are.

Potato and Horseradish Gratin

Horseradish, as I’ve noted elsewhere, loses most of its potency when heated. It also retains its flavor, making it a great accompaniment to potatoes in this simple gratin. The trick is finding fresh horseradish—and then peeling and slicing it (some people wear goggles, not a terrible idea). If none of this appeals to you, just make the gratin with potatoes—it’s a beaut either way. Serve with roast chicken or meat. Other vegetables you can prepare this way: any root vegetable or tuber—carrots, parsnips, or turnips, for example—will work fine prepared in this style, alone or in combination.

Spinach Gratin

There are many ways to make spinach gratin: you can use heavy cream as a medium (essentially making creamed spinach, then baking it with cheese) or stir spinach into a white sauce. This is the most substantial, essentially a custard, and my favorite.

Torta di Patate e Pomodori

A beauty—mild, soothing, and delicious. Be sure to use waxy (“new”) potatoes, which will not fall apart. As with the other tarts in this chapter, this is best warm or at room temperature and may be prepared without any crust at all. If you’re using a crust, the recipe will take less time if you have a premade crust.

Rutabaga Pudding

As good warm as hot, this is a nice homey casserole to go with a roast or other dish in the spirit of Sunday dinner. Other vegetables you can prepare this way: rutabagas are not only traditional but wonderful, but other turnips are great too, as are carrots, potatoes, parsnips, and celeriac (celery root).

Fresh Bread Crumbs

Fresh bread crumbs are superior to packaged ones in many ways. First of all, you can start with good bread. Second, you can keep them coarse, and coarse bread crumbs are almost always preferable to fine. Finally, you can season and toast them as you like.

Pasta Frittata

It’s no secret that people eat leftover pasta, but this is a time-honored way to turn it into something else. It’s so good that you might find yourself cooking extra pasta just so you have an excuse to make this. As with any other frittata, you can add what you like here. It might be a bit of pancetta or bacon, but it can also be a bit of cooked vegetable or something as simple as minced scallion or parsley.

Kasha with Cheese

This can work as a main course, though it is better, perhaps, as a side dish with poultry or as a filling for Pierogi (page 59). Given real-world options, fresh ricotta might be your best bet for cheese. If all you can find are packaged cheeses, small curd, full-fat cottage cheese is probably the best choice.

Sopa de Ajo al Tomate

A staple of homes in Cuba and much of the rest of the Caribbean, where tomatoes are available year-round, this soup clearly derives from the classic Mediterranean “boiled water” (see the variation), a soup based on garlic, bread, and whatever else can be found. Despite its humble origins, this is a wonderful dish for entertaining (be sure to warn your guests that the bowls are hot!).
