Round out your breakfast: Add 1 cup steamed skim milk (heat on stove or in microwave until milk starts to froth) topped with 2 tsp nutmeg and 1 tsp honey.

Canyon Ranch Grilled Chicken Enchiladas and Calabacitas

The enchiladas and the calabacitas each take around 30 minutes to prepare, so if you're making both, give your Self about an hour. Round out your dinner: Add 1/2 cup mixed greens with 2 tbsp lowfat Italian dressing.

Baked Wrapped Tilapia

Fish dish: Tori Amos's favorite recipe Chef Duncan Pickford shares his recipe for his client's preferred healthy dinner.

Canyon Ranch Grilled Golden Pineapple with Caramel Sauce

If you enjoy this decadent dessert (or the <epi:recipelink id="230320">Canyon Ranch Cocoa Chimichanga</epi:recipelink>) once a week, you will satisfy your cravings and stay on track with your weight loss and healthy-eating goals.

Canyon Ranch Grilled Portobello Sandwich with Roasted Peppers

Round out your lunch: Add half a mango or papaya.

Linguine with Chile, Crab, and Watercress

A simple dish from England's linguine genie, Nigella Lawson Like the rest of us, Nigella Lawson is ready for winter to be over. Her new book, Forever Summer (Hyperion), out next month, is full of recipes that scream summer. Crab, the star of this meal, costs less than lobster and has more zinc (which helps repair tissue in the body). Plus, the dish is quick, leaving more time to slather on the Self-tanner.

Shrimp Cooked in Paper

Wrapper's delight: two paper pouches, eight shrimp, 10 minutes — dinner! Take a lowfat cooking tip from French-born Alain Ducasse, whose New York City restaurant, Alain Ducasse at the Essex House, is among the world's swankiest. Ducasse has perfected a simple method of cooking in a paper pouch, which uses trapped steam — not fat — to seal in flavor. In this recipe he teams shrimp with apples and cheese for a trio of seductive tastes. Tuck the ingredients into parchment-paper hearts, pop them in the oven and prepare to fall in love.

Mexican Chopped Salad with Honey-Lime Dressing

Tortillas aren't the only depository for beans, corn and tomatoes. Let romaine lettuce do the job. Feta cheese supplies a dose of calcium and major flavor. And the honey-lime dressing adds just the right touch of tangy sweetness. Buen provecho!

Chicken Salad with Couscous

Lean, smoked chicken breast gets a special — and healthy — treatment in this creative mix. The couscous absorbs the citrus juices (or use quinoa for extra protein — it has the highest amount of all the grains) for a tartness that plays well off the sweetness of the grapes. The bed of arugula is more than merely dish dressing: It's high in calcium and magnesium, making it a bone builder.

Shrimp and White Bean Salad

Who you callin' shrimp? Livened up with garlic, naturally low-calorie shellfish delivers big-time flavor in this recipe adapted from Remi-to-Go restaurant in New York City. The cannellini beans and celery give the salad a fiber kick for a filling combo.

Lean Lasagna

Homemade, at least the way Self does it, fills you up without filling you out, but it takes an hour to make. Freeze the leftovers for quick meals that are more healthful than most of the ones you find in the freezer section of the supermarket.

Crisp Oven-"Fried" Chicken

Round out the meal with a veggie side, like a microwaved, vitamin-A-rich sweet potato.

Healthy Homemade Cheeseburgers

Patty savvy: With a mere 12 minutes of prep time and more meat for fewer calories, a homemade burger can't be beat. Ours uses extra-lean ground beef; fast food makers go for cheaper, fattier grinds. And our patty is sandwiched between a whole-wheat bun for a fiber hit.

Cornmeal-Crusted Fish Fillets

Many companies use unhealthy trans fats in the batter. Our winning recipe call for a healthy egg-white coating.

Better Bean Burrito

It's a wrap! Feeding the family? Let everyone be a wrap artist by rolling his own with our recipe, which is filling and not very fattening.

Mighty Morning Sandwich

Morning rush hour fix: For a low-cal breakfast on the run, it's hard to top Weight Watchers SmartOnes (210 calories, 5 grams fat). How did this supermarket standby beat Self's own recipe? Not everything in one lowfat egg patty comes from the henhouse. It also has cornstarch, xanthan gum, and artificial flavoring. Our homemade recipe uses 100 percent egg, which is naturally higher in fat.

Presto Pizza

Slice advice: One of America's favorite pastimes — going out for pizza — doesn't have to be a caloric catastrophe if you stick with the basic (like Pizza Hut Hand Tossed cheese) and stop at two slices. Steer clear of cheese-filled crusts; they can add 10 grams of fat per slice. We gave our homemade pie an advantage by adding broccoli, but there's no reason not to put veggies on a fast food or frozen one.

Chicken Mushroom Soup with Leeks

A bowl of soup is the winter equivalent of a summer salad — an easy, all-in-one way to get your veggies and protein. This filling dish, adapted from The Weekend Chef by Barbara Witt (Simon &Schuster), calls for flavorful leeks and potassium-rich mushrooms. Whip some up and freeze leftovers for future quickie dinners.

Actress Marissa Matrone shares a recipe her grandmother taught her. It's almost like ice cream!
