Vietnamese Beef Soup
Called pho in Vietnam, this unusual soup is a wonderful party centerpiece dish for an informal gathering. Start out by supplying everyone with a large soup bowl and a ladle. Place the soup tureen in the middle of the table. Have each guest take a generous helping of noodles first, then some meat and broth. Each serving is topped off with shredded lettuce, sliced green onion and a squeeze of lemon juice.
Vegetable Ragoût with Cumin and Ginger
A mixed vegetable stew, seasoned with spices characteristic of Morocco. Serve it with rice or couscous.
Swordfish with Salmoriglio Sauce
The Strait of Messina is a rich source for swordfish, which the Sicilians prepare in many ways. Here it is at its simplest: grilled and served with salmoriglio sauce. (In Sicilian, it is sammurigghiu sauce.) The words means "brine", a translation that does not convey the taste or texture of this cooked blend of olive oil, lemon juice, garlic and herbs. Serve with bread and pour a white wine, preferably Sicilian. For dessert, offer cannoli from the bakery.
Vegetarian Lentil Stew
Serve this hearty stew with plain yogurt or raita for a high-protein vegetarian meal.
Sicilian Fish Stew with Tomato and Parsley
This easy zuppa di pesce is a staple of the anchovy packers of Mazara del Vallo on the northwestern coast of Sicily. It always comes with bread to soak up the juices.
Creole Red Beans and Rice Salad
Pick up some roasted or steamed vegetables from a deli or salad bar and some corn bread to serve alongside. Vanilla ice cream topped with sliced peaches and toasted pecans would be a nice ending.
Can be prepared in 45 minutes or less.
Annabel's Pasta Salad
This salad's delicious dressing is popular with my children as a dip for vegetables (I make a bottle of it to keep in the refrigerator). The salad is great for lunch boxes, or as a side dish served warm or cold. Use three-color pasta, if possible.

Canary Islands Spicy Potatoes
I lived in the Canary Islands for ten years and am reminded in a small way of that happy time whenever I make my former neighbor's spicy potatoes (tradition has it that the real thing is cooked in sea water). I hope that you will enjoy them--they go wonderfully well with grilled fish and meat.
