Can be prepared in 45 minutes or less. From northeastern Thailand, som tai is a salad Thais and farangs-the Thai name for foreigners-have come to love. It is traditionally made with grated green (unripe) papaya that is pounded slightly to soften the fibers before being tossed with lime juice, dried shrimp, and chilies. As the availability of green papaya in the United States is limited, we used cucumber and carrot. We also left out the dried shrimp in order to create a more delicate but still delicious dish.

Carnitas is a traditional Mexican dish of fried pork. In this version, the meat is braised with vegetables and spices. For best results, use large, meaty ham hocks.

"I'm hoping to get the recipe for a terrific appetizer I tried at Hamiltons' at First & Main in Charlottesville, Virginia," says Sue Carter of Murieta, California. "The seafood fritters came with lettuce leaves (to wrap around the fritters) and a spicy sauce."

Adding moisture and flavor without fat is achieved in the beet and Asian pear salad: Its oil-free dressing is made with mustard, lemon juice, and apple jelly (substituting apricot preserves for the jelly works well in other salads, especially those using bitter greens).

Also good made with melon or oranges.

Serve with potato chips, a heap of tangy coleslaw, and some sweet gherkins. Finish with strawberry ice cream and chocolate cookies. By the way, the filling for these quick sandwiches is delicious on toasted English muffins for breakfast.

Chipotle hot sauce and queso fresco can be found at Latin American markets and at many supermarkets.

Spicy and sweet, this unusual salad would be ideal with grilled chicken or fish.
