Leafy Greens

Orange, Roasted Beet, and Arugula Salad

The beet can be roasted up to a day in advance of serving the salad. Although the red beet contrasts nicely with the orange wedges, a golden or chioggia beet can be used instead.

Roasted Portobello Salad with Blue Cheese

Roasting the portobello mushrooms deepens their flavor and makes them tender and meaty. To clean them, wipe the caps with a damp paper towel (do not soak).

Napa Cabbage Salad with Apples and Caraway Seeds

Napa, or Chinese, cabbage (not to be confused with bok choy) has a delicate taste and tender, ruffly leaves. Here one head is divided into two salads—one with Asian-style ingredients and the other with apples and caraway.

Napa Cabbage Salad with Peanuts and Ginger

Napa, or Chinese, cabbage (not to be confused with bok choy) has a delicate taste and tender, ruffly leaves. Here one head is divided into two salads—one with Asian-style ingredients and the other with apples and caraway.

Hot Spinach Dip

Serve this rich, velvety dip with crostini (page 365), breadsticks, or crackers. Or try it as a delectable accompaniment for roast chicken or pork.

Pot Stickers

Look for wonton wrappers in your supermarket’s refrigerated section (often next to tofu); they are also available frozen. Unused wrappers can be frozen, wrapped in plastic, for up to two months.

Prosciutto and Fig-Jam Sandwiches

If you don’t have time to make the fig jam from scratch, look for a good-quality version at your grocery store. Asiago cheese has a mild, nutty flavor; parmesan cheese can be used in its place.

Artichoke and Salami Sandwiches

This sandwich shows how just one special addition—here, a delicious spread—can make a big difference. The spread could also be served with crackers or crostini (page 365) or as a dip for crudités (page 52).

Stuffed Mustard Greens

THIS RECIPE WAS INSPIRED BY DOLMADES, the classic Greek appetizer. Mustard greens, a deliciously bitter leaf, stand in for grape leaves, and the earthiness of celery root and the bite of sheep’s-milk cheese complete this healthy, hearty dish that your vegetarian—and nonvegetarian—friends will love. It’s important to use fresh herbs instead of dried in this recipe because these ingredients aren’t cooked and dried herbs wouldn’t be fully reconstituted.

Braised Kale Gratin

KALE SEEMS TO INTIMIDATE PEOPLE. Maybe it’s the large dark green leaves and the tough thick stalks that spill over the grocery bins. Whatever the reason, it’s a shame. Leafy kale is one of the most nutritious vegetables around and extremely versatile. This recipe takes a detour from the classic gratin: Brown rice replaces potatoes, and the earthiness of the kale creates a healthy, hearty side dish. You can use any variety of kale in this dish, but my favorite is the dinosaur variety for its full flavor.

Kale and Tapenade Stuffing

While it’s great for chicken, this stuffing is also delicious on toast and as a sandwich spread.

Kale-Stuffed Chicken Breasts

STUFFED CHICKEN BREASTS ARE EASY TO PREPARE but have a wow factor that will impress your guests (or your family). Earthy kale and savory olive tapenade come together to dress up ordinary chicken.

Penne and Smoked Mozzarella Salad

WHILE FRESH MOZZARELLA IS USED IN AN ENDLESS VARIETY of pastas, pizzas, and salads, smoked mozzarella adds more flavor. It is made by smoking cheese over wood to produce a smoky, creamy result. This easy pasta salad makes a standout lunch dish, with the mayonnaise lending extra creaminess. You can adjust the amount of dressing according to taste.

Bennett’s Cobb Salad

COBB SALAD IS A LUNCHTIME STAPLE, and when a few new ingredients such as crab, crispy prosciutto, and lime-jalapeño dressing are thrown in the mix, the classic just gets better. The Curried Crab Lumps can be made one day in advance and kept in the refrigerator.

Crunchy Chicken and Rice Salad

THIS HEALTHY SALAD, made with crunchy cabbage, sweet carrot, juicy chicken, and fresh cilantro, gets a bite from the lime jalapeño dressing.

Black-Eyed Pea and Mustard Green Salad

THIS IS A PASTA & CO RECIPE that’s been a customer favorite for years. Inspired by the classic Southern ingredient black-eyed peas, this healthy salad has the sharp flavor of mustard greens, while fresh tarragon adds an extra zing. For a heartier salad, add a few slices of leftover grilled, roasted, or poached chicken.

Iceberg Wedge with Blue Cheese-Lemon Vinaigrette

TRADITIONAL ICEBERG WEDGE SALADS arrive smothered in heavy blue cheese dressing. Our version has a lighter dressing, thanks to rice vinegar and lemon, but still maintains that tangy blue cheese flavor.
