Grilled Sardines with Baby Fennel, Capers, and Taggiasca Olives

This is a dish to transport you to the Italian Riviera—the freshest sardines, simply grilled, splashed with lemon, briny olives, and the sweet anise flavor of the season’s first fennel. This is also finger food, so get out a big stack of napkins and don’t eat them with those who are excessively dainty. They don’t deserve them anyway. It would play into the whole relaxed-by-the-sea thing if you have your fishmonger scale and clean the sardines.

Panzanella with Crispy Pig’s Ear

I’m an ear man—if we’re talking pig. Crispy pig’s ears are gelatinous, cartilaginous, rich, chewy goodness that make an awfully lovely garnish for a fresh panzanella bursting with summer vegetables. You’ll want to allow about half an ear per person, which should amount to about a pound, depending on the pigs, of course. As with many of the best cuts of the pig, it takes a while to get ears into a perfect state for eating. You can boil them, but to get them perfectly tender and ready for frying, I like to poach them in oil first. You need to plan ahead—they take about six hours in a slow oven—but you could do that the day before, or even in the evening when it’s cooler out, then finish them off the day you’re going to serve them.

Pickled Mackerel Salad with Watercress, Radish, and Pistachio

This delicious salad makes a solid first course or a hearty addition to a small-plate menu. Mackerel is a fantastic fish, with rich flesh and a deep flavor that is tamed and enhanced by a quick pickling treatment. Crisp radishes and assertive watercress hold up to the forward flavors, while a sprinkling of toasted pistachios adds nice texture and crunch. For a fun variation, use the same pickling liquid on sardines. Because sardine fillets are much thinner, they can be cooked simply by heating the liquid to boiling and pouring it over the fillets. Continue as directed with the rest of the recipe.

Puntarelle with Anchovy, Garlic, and Parsley Dressing

Puntarelle is also called Catalonian chicory, though I think of it as a truly Italian vegetable. It is in the chicory family, with thicker stalks tapering to serrated leaves that look a bit like those of a dandelion. The leaves have a little bite to them, with more of a fennel-endive thing going on in the stalks. It might take some searching to find it in the market—you could always try asking your market if they would order it—but it’s worth seeking out. In Rome, puntarelle is traditionally paired with strong flavors such as anchovy and garlic that can match the strong flavor of the vegetable, as I do here, along with an ice-water soak that takes off some of the edge. If you can’t find puntarelle, I suppose you could substitute frisée, but then you’re kind of missing the magic.

Bigoli with Grilled Sardines and Fennel

If you were Venetian, and therefore Catholic, and were forbidden to eat meat on Fridays, you might choose instead a delicious whole wheat pasta tossed with rich sardines and fennel for your supper. Aren’t you lucky, then, that even if you are a Swedish Lutheran, you can happily take part in this lovely ritual? Bigoli is yummy fresh, but it can also be found dried in Italian markets. Although you could substitute other types of pasta, the depth of flavor of the whole wheat really holds up to the intensity of the fish.

Grilled Polenta with Heirloom Tomatoes and Pounded Anchovy Sauce

Seattle summers are our best-kept secret—with long, lovely days just hot enough to make you want to stay out of the kitchen and linger outside. The perfect appetizer for a patio barbecue, grilled polenta is easy, crisp, and luscious, and is played to its best advantage when topped with juicy heirloom tomatoes brightened with garlic and anchovy. If you like, substitute basil or another favorite tender herb for the mint. This would also be nice served with a handful of baby greens on the plate.

Soft-Boiled Eggs with Anchovy Mayonnaise

Think of these as the most decadent, upscale version of a deviled egg you’ll ever eat. But instead of rubbery eggs sprinkled with paprika, these soft-boiled beauties reveal moist, velvety yolks, accented by a luxe anchovy mayo. This is the recipe where you want your eggs to be as fresh as possible. Short of keeping your own chickens, go to your farmers’ market and buy local. Don’t get all freaked out if they have a bit of straw or dirt or, um, other debris on the shells. It means they’re fresh, plus eggs have a natural antibiotic coating that protects them until you wash them. Inside, you’ll find bright orange-yellow yolks and an incredible flavor that supermarket eggs just don’t offer.

Sea Bass Crudo with Vanilla Oil, English Peas, and Mint

Using vanilla in savory dishes has become more popular, but don’t discount it as just a fad. The vanilla adds a depth and a fragrance that your guests probably won’t be able to peg right off the bat, but I guarantee they’ll love the combination. Sea bass has a clean, slightly buttery flavor that really works with the vanilla oil, while the peas add sweetness and texture and the mint brightens the whole thing up. The extra vanilla oil will last up to 2 weeks in the fridge, and makes a fabulous addition to vinaigrettes. Save the vanilla pod and bury it in sugar, or cover it in vodka to make your own extract.

Sardine Crudo with Celery Hearts, Pine Nuts, and Lemon

If you simply can’t get past the idea that sardines are oily and fishy, let this crudo change your mind. The key to this dish is using sweet celery hearts—the tender, yellow, innermost bits of the head. You might think of this as the part of the celery that goes in the compost pile, but the truth is that the small yellow leaves have incredible flavor, and the pale stalks add texture without strings. As with all crudos, use your very best olive oil.

Carne Cruda with Anchovy and Garlic

Some people will tell you that it’s okay to make carne cruda, known as “steak tartare” in fancy French circles, in a food processor. Sorry, no go. You don’t chop it, pulse it, or otherwise mangle it. You freeze it, slice it, crosscut it, and dice it. Period. Yes, chopping the meat by hand requires patience, but it creates the perfect texture. Freezing the meat beforehand makes this job easier. This is one of those recipes where you must use the very best ingredients you can find—the best olive oil, the best imported anchovies—to take this crudo over the top. Buy the best New York strip or tenderloin you can afford, and tell your butcher how you’re serving the meat to ensure you get the very best. For a light meal, serve with plenty of crusty bread and a small salad.

Salmon Croquettes

I grew up on these tasty little fried cakes, which Granny Foster used to serve for breakfast with fried eggs and biscuits, or sometimes for supper along with mashed potatoes and coleslaw. Like most Southerners, Granny used canned salmon in her croquettes. I opt instead for freshly poached or grilled salmon, a move that allows the delicate, grassy flavor of the fish to come through. Crispy and satisfying (the name croquette comes from the French for “to crunch”), these easy treats are an excellent way to revitalize leftovers from last night’s salmon dinner, ensuring that the switch from canned to fresh fish does not necessarily sacrifice convenience.

Sautéed Flounder with Garden Vegetable Ratatouille

I like to make this in early summer, when the first summer vegetables are coming in and the flounder, which can grow to as much as twenty-five pounds, are running small—what our fishmonger calls “plate size.” They are so fresh and dainty at that time of year that I usually budget one whole fish per person. I sometimes serve this simple dish with a green salad or fluffy steamed rice, but you don’t have to, as it’s really a complete meal in and of itself—the vegetable ratatouille, made with smaller-than-usual dice, doubles as both a sauce and a vegetable side.

Grilled Grouper with Heirloom Tomato Salsa

Last time I was at the SeeWee, an old-school seafood restaurant outside Charleston, I had an incredibly good plate of grilled grouper with fresh tomato salsa. Not only was the fish superfresh and perfectly cooked, but the salsa, a rough mix of vine-ripe tomatoes, white onion, and cilantro, was so simple and bright that it enhanced the flavor of the fish perfectly without overpowering it. I was so fond of it that I’ve been re-creating it at home ever since. It’s just the sort of light, fresh supper you want in the dead of summer.

Skillet-Fried Catfish with Herb Tartar Sauce

It may not be deep-fried, but with a satisfyingly crunchy cornmeal crust, this skillet-fried catfish has all the flavors and textures that you would expect from fried fish. Most important, served with a healthy dollop of Herb Tartar Sauce or a heap of Roxy’s Grated Coleslaw (page 260), lemon wedges, and cold beer, it is just as sure to draw a crowd. This recipe can also be made with snapper, flounder, or any other flaky white fish.

Gravlax

Gravlax is surprisingly easy to make at home, and you can vary the herbs or add spices to suit your taste. Once you become comfortable with the process, you’ll want to have this around for easy lunches and snacks.

Salmon with Choucroute and Gewürztraminer Sauce

This unexpected salmon preparation borrows flavors from Alsace. The usual partner for choucroute is a medley of pork meat sausages, but the oceany flavor of the best wild salmon works surprisingly well. The tart sauerkraut and spicy Gewürztraminer balance the richness of the fish. Juniper berries lend a distinct perfume. Needless to say, the perfect wine for this dish is the one that you used to make the sauce.

Seared Yellowfin Tuna with Walnut Red Pepper Sauce

This dish’s vibrant, savory sauce is my version of muhamarra, a mildly spicy and slightly fruity Turkish red pepper condiment. It is easy to prepare and goes great with just about any grilled meat or fish (or with thick slices of grilled eggplant). Pole-caught yellowfin tuna is a good sustainable choice; its meaty texture and flavor stand up well to the thick pesto-like puree. Swordfish would be a good alternative, cooked the same way as the tuna. A green vegetable, baked or grilled eggplant, or rice pilaf would make a great side dish.

Sautéed Snapper with Grapefruit-Basil Butter

One of the great things about living in Louisiana is the plethora of sunny citrus fruits available during winter. When my grapefruit tree started producing more than I could use at home, I developed this recipe to serve at Bayona. Fresh basil is commonly partnered with lemon or orange, but I love how the faint anise flavor of the herb plays off the bright, tart-sweet punch of grapefruit (and since it rarely freezes in New Orleans, we can typically grow basil all year round as well). Citrus and fish is such a great match—this sauce is delicious with pompano, amberjack, or just about any fish.
