Cheese

Feta Spread with Rosemary and Lemon

Similar to the whipped feta spread at Papagus Greek Taverna in Chicago.

Cranberry-Tequila Cream Cheese Tart with Cornmeal Crust

The creamy tequila-orange filling contrasts perfectly with the tart cranberry topping.

Creamy Parmesan Polenta

For a vegetarian version, substitute canned vegetable broth for the chicken broth; the result is equally delicious.

Tuna, Lemon, and Caper Sauce

Canned tuna sparked with lemon and capers creates a superb sauce that complements many pasta shapes — penne, shells, or linguine, to name only a few. I prefer solid-pack tuna in olive oil for the best flavor and texture. I sometimes add a small handful of unpitted black olives — Kalamata or Gaeta — and a large, ripe tomato, seeded and diced, for a delicious variation. Italians would never serve cheese with fish, but you have my permission to break the rules!

Parmesan Puffs

Can be prepared in 45 minutes or less.

Chocolate-Swirl Cheesecake

To save time, simply skip the topping.

Eggplant Pizza

For his pizza, Geoffrey Selling broils the eggplant instead of frying it in a lot of oil to lower the fat. But he coats the eggplant with commercial olive-oil spray, and we are reluctant users. How much different is spraying from lightly brushing with oil? To find out, we tested this two ways, spraying the eggplant one time and brushing it the other, and did not find a difference in oiliness. But after tasting the spray, right from the can, and then the bottled oil, we prefer the old-fashioned way.

Halibut Steamed with Oranges, Tomatoes, and Olives

The fish steams directly atop the gently simmering vegetables in this flavorful and very easy dish. Serve with steamed rice tossed with lots of chopped fresh cilantro. Market tip: Choose Pacific or Alaskan halibut rather than Atlantic halibut. Or substitute another firm white fish, such as Alaskan cod, mahimahi, or striped bass.

Scrambled Eggs with Avocado, Onion, and Cheddar

This recipe can be prepared in 45 minutes or less.

Rib-Eye Steaks with Bell Peppers and Gorgonzola Butter

By mid-decade, indulgence foods were back with a vengeance-a sign that too much of a good-for-you thing was starting to get boring at the dinner table. And when the diet gurus switched their focus from complex carbohydrates to protein, steak regained some respect from nutrition buffs. Also, many specialty foods shops began catering to the most health-conscious meat eaters by offering beef raised without hormones.

Lemon and Rum Cheesecake with Strawberry Compote

Majorca, Spain When this dessert is made on Majorca, rum-soaked raisins are baked on top. Here the filling is flavored with rum; then the cake is served with a strawberry compote.

Frico Cups with Herbed Goat Cheese

It's very important to use freshly shredded Parmigiano-Reggiano — preferably shredded with a Microplane — for these parmesan crisps (called frico). The consistency and volume of pregrated cheese is quite different and can result in cups that are heavy and chewy. Active time: 40 min Start to finish: 40 min

Parmesan Chicken with Mixed Baby Greens

Serve with: Steamed broccoli and roasted potatoes. Dessert: Baked apples.

Roasted Beets with Walnut Gorgonzola Dressing

Unfortunately, beets are not on the top-ten list of favorite foods for many people. Most people hate them because they've only eaten them boiled or canned, but I was fortunate enough to try the real thing at an early age. So they're on my top-ten list, and this recipe might just be a great way to get them on yours. The roasting brings out the sweetness and intensifies the depth of flavor that is lost when you boil. Once you roast a beet, you'll never go back. Don't throw away the beet greens: braise or sauté them if they are large, or add them to salad greens if they are small. The rich, thick Walnut Gorgonzola Dressing is also great on burgers or grilled portobello mushrooms or mixed into greens.
