Cabbage
Crab Cocktail
While I love a shrimp cocktail, this I think has a slight, elegant edge. The hot, green mustardy horseradish, the wasabi paste, is not so hard to find these days but you could always substitute a small dollop of Colman's English mustard in its place I suppose. Similarly, you could shred some little Boston lettuce should you have difficulty locating the Chinese leaves.
The Cabbage Soup Diet
Wonderfully pure, a "vat" of this stuff lasts about a week, depending on how much you eat each day. Eat as much of the soup as you like, as often as you like.
Sea Scallops with Ham-Braised Cabbage and Kale
This dish — the result of a conversation between two food editors who had just returned from opposite parts of the country — almost made itself. Paul Grimes came back from Charleston talking about the creamy stone-ground grits, shrimp, and collard greens of chef Kevin Johnson at Anson, and Kemp Minifie returned from Seattle to tell us about the scallops over braised cabbage with foie gras vinaigrette that Johnathan Sundstrom serves at Lark. We loved the idea of both dishes so much, we met somewhere in between, with this simpler recipe.
Rack of Lamb and Roasted Cabbage with Cauliflower and Date Purees
This dish features cabbage and cauliflower prepared simply, to preserve the purity of their flavors. The dates bring out the inherent sweetness of both vegetables perfectly. Make the purées first, then roast the cabbage and cook the chops.
Tofu and Cabbage Salad with Peanut Dressing
If you're looking for a way to get soy-good-for-you tofu into your diet, call off the search. This cabbage-based blend busts the myth that tofu is tasteless. Our secret weapon: rich (but not fattening) peanut-yogurt dressing.
Cabbage Stuffed with Beef, Zucchini, and Herbs
The health benefits: nearly a fifth of the RDA for vitamin C in 1/2 cup raw cabbage; magnesium from the zucchini; eggplant offers fiber.
Fresh Tuna Sandwich
The decked-out deli sandwich
Who knew tuna on rye could be so sophisticated? "I go for the big taste," says Taylor Alonso, chef of the Bellport, a comfortably chic restaurant in Bellport, Long Island, that's a favorite summer haunt of New Yorkers. Alonso went for big nutrition, too, when he created this elegant and delicious tuna-steak sandwich for Self. Fresh tuna supplies lots of omega-3s, and goat cheese offers more calcium (with less fat and cholesterol) than most cheeses.
California Garden Roll
The healthiest take-it-anywhere lunch.
Chicken in Riesling with Prunes and Cabbage
What to drink: The same type of wine the chicken is cooked in — a dry Riesling from Alsace.
Winter Vegetable and Beef Soup
George Hendrix of Carbondale, Colorado, writes: "My family is usually in a hurry to eat, so dinner has to be on the table fast. This soup was one of my mom's standbys when I was growing up. I often make it in big batches and just ladle it out and microwave as needed."
This soup is even better the day after it's made, when the flavors have had a chance to mellow.
Mu Shu in Moments
Better than anything you can get at your local takeout joint, this way of making the Chinese classic can be done in record time.
Men's Favorite Salad
Barbara Edwards, the reader who sent us this recipe, wrote that every time she served this salad, the men in the group would "lick the platter clean." We found the women in our test kitchens were crunching on it as happily as the men. The creaminess and tang of cottage cheese and mayonnaise offset the edge of onion and the crispness of cabbage.
Asian Dumpling Soup
We love the homey quality and clean flavors of this colorful soup.
Potato Pancakes with Confit Duck and Red-Cabbage Beet Slaw
Replacing this Czech dish's traditional pork stuffing with confit duck results in a much shorter cooking time without sacrificing any mouthwatering flavor.
Grapefruit and Jícama Salad
This recipe is part of a menu developed for Epicurious by Charles Phan, the chef-owner of San Francisco's The Slanted Door. Read more about Phan and Vietnamese food.
Roasted Sausages, Apples, and Cabbage with Caraway
Serve this hearty meal with mustard, a side of mashed potatoes, and ice-cold dark German beer.
