San Francisco Cioppino

Who better to provide a cioppino recipe than Jesse Llapitan, the executive chef of San Francisco’s Palace Hotel, the city’s grande dame? Every San Franciscan puts his or her own stamp on this rustic fisherman’s stew, but the Dungeness crab is nonnegotiable. Chef Llapitan attended the 2005 Workshop.

Tex-Mex Turkey and Bean Chili

Chili powder, chocolate, and cumin are often combined in Tex-Mex cooking, and this turkey chili stays true to those roots. The recipe makes a large yield, so you can serve some chili right away, then freeze the rest to enjoy later.

Quick Chickpea Curry

WHY IT’S LIGHT Because lots of Indian food entrees use high-fat ghee (clarified butter) or coconut milk as the cooking liquid, they can contain more fat and calories than you might think. For this vegetarian curry, chickpeas and spices are simmered simply in water, yet the results are still delicious. Serve with rice or warm whole-wheat pitas.

Beef Stew

Good choices for stew meat are oxtails, shanks, beef chuck, short ribs, pork shoulder, beef cheeks, lamb shoulder, and lamb neck. These cuts all have lots of connective tissue and fat to make them tender and full of flavor. For stew, the meat is cut into smaller pieces. Have your butcher cut bony cuts such as short ribs and lamb shanks into 2-inch lengths. Cut boneless meat such as chuck or shoulder into 1 1/2-inch cubes. The pieces may be cut larger for a more rustic stew, but cut any smaller they tend to fall apart when cooked. If you are buying beef that has already been cut up for stew, ask what cut it is from. Most meat counters use top and bottom round, which I find too lean to make a good stew; they cook up dry. Ask the butcher to cut some chuck into stew meat for you instead, or buy a large piece and cut it at home. Season the meat with salt and pepper. If you have the time, season it a day ahead. If you make a marinade, stir the meat now and then while it is marinating; this will help the marinade flavor the meat evenly. Any vegetables in the marinade I first cook slightly in a bit of oil, for more flavor. Let them cool before adding to the meat. Brown the meat well in a fair amount of oil, lard, or fat. Don’t crowd the pieces; brown them in as many batches as necessary. You can use the same oil for each batch as long as the pan does not burn. If it does, wipe out the pan and continue with fresh oil. When the meat is browned, drain the fat from the pan and deglaze the pan with wine, tomatoes, broth, or water. Short ribs and oxtails are some of my favorite stewing cuts, because they make such a flavorful sauce. These cuts can be browned in the oven: Preheat the oven to 450°F; lay the meat out on a rack in a shallow pan; and cook until the meat is brown and the fat is rendered. With this method there is no pan to deglaze, but it is quicker and easier than browning on the stovetop. If the aromatic vegetables are to be left in the stew, cut them into even, medium-size pieces. If they are to be discarded at the end, leave them in large chunks, for easy removal. Put the vegetables, meat, and deglazing liquid into a pot. Choose a pot large enough to accommodate the meat in two, or possibly three, layers. If the meat is piled higher than this, the bottom layer will cook and fall apart before the upper layers are done. Stirring doesn’t really help this much, and the chance of sticking and burning is much greater. Add broth or water, as the recipe asks, almost to the top of the meat, but do not submerge it. When I am using a marinade that is mostly wine, I like to reduce it (boil it down) by half or more before adding it to the pot. This removes the raw taste of the wine and allows room for more broth, which makes a richer sauce. Bring the liquid to a boil, then turn the heat down to a bare simmer, and cover the pot. Use a flame tamer if necessary to keep the stew from boiling. Or cook the stew in a preheated 325°F oven. If the stew boils hard there’s a good chance the meat will fall apart and the sauce emulsify (the fat and the liquid bind together, which makes the sauce murky). Check the pot now and then to monitor the cooking and the level of the liquid; add more broth or water if needed. Cook until the meat is very tender. This will take anywhere from 2 to 4 hours depending on what cut is being used. There should be very little or no resistance when the meat is poked with a small knife or skewer. When the meat is done, skim the sauce well, removing as much of the fat as you can. This is much easier to do after the simmering has stopped and the liquid has had a chance to settle. The sauce may be strained, but do so carefully: the meat is very delicate now and can fall apart. If the stew is being served another day, the fat can be simply lifted off after chilling in the refrigerator. Chianti Marinated Beef Stew

This homey one-pot meal is reminiscent of the stews you find in Tuscany and Umbria, which are loaded with vegetables, potatoes, and herbs. It’s a great choice if you’re looking for a dish to serve to a crowd; the succulent stew can simmer for a long time—the sauce just becomes richer and more intense—and it’s hard to believe you can get so much flavor from a relatively inexpensive piece of meat. Just be sure to use a Chianti that’s good enough to serve along with the meal.

Ligurian Fish Stew

Liguria is a coastal region in northern Italy known for its fresh seafood and many variations of fish stew, among other things. My version uses just white fish with lots of veggies so it is lighter than many traditional fish stews. It is still sophisticated and is made with white wine, which is a perfect pairing with seafood.

Chicken, Artichoke, and Cannellini Bean Spezzatino

Spezzatino is an Italian vegetable stew that has meat in it. This one boasts small bites of chicken and a sprinkle of crunchy pancetta. I love artichokes, so I add them, along with the beans, to make this soup a meal.

Curried Tofu with Soy sauce

Given that tofu itself does not add much body to a dish, you need a substantial sauce, like one with canned coconut milk as its base, to make up for the tofu’s blandness. Like heavy cream, coconut milk will thicken a sauce, making it luxurious in almost no time. The onion must be browned carefully and thoroughly: keep the heat high enough so that this happens in a timely fashion—it should take about ten minutes and in no case more than fifteen—but not so high that the onion burns. I call this level of heat “medium-high,” but all stoves are different; the oil should be bubbling but not smoking, and you must stir the onion every minute or so.

Veal Stew with Dill

The smaller the pieces you cut, the shorter the cooking time, but I wouldn’t make them too small or you’ll rob yourself of some of the satisfaction of eating them. This stew is also excellent made with lamb shoulder.

Sauteed Chickpeas with Meat

This recipe which is vaguely related to the classic chili, combines chickpeas, meat, and spices and takes advantage of all of those assets. The cooked chickpeas are sautéed over high heat until browned and slightly crisp, and the pan is ultimately deglazed with the reserved chickpea-cooking liquid.

Carrot, Spinach, and Rice Stew

This is a stew of carrots, spinach, and rice cooked, you might say, to death. I first ate it at a Turkish lunch counter and was taken by its depth of flavor. The whole is definitely greater than the sum of its parts.

Sweet and Sour Rabbit or Chicken

A classic Sicilian preparation, with exotic, contrasting flavors. Domesticated rabbit is sold in many supermarkets these days, but since it really does taste like chicken, you can use that if you prefer. Either way, start the meal with a simple pasta dish or serve this with bread and a cooked vegetable.

Stifado

A dark, fairly intensely flavored stew that is best made with rabbit (or, traditionally, hare), but is quite good with chicken.You can make the entire dish in advance and let it rest at room temperature for a few hours before reheating (or cover and refrigerate overnight). This is lovely just with crusty bread, or with any potato dish.

Chicken with Clams

I have never seen this wonderful stew appear in any other cuisine, but it is a great one, the brininess of the clams vastly improving the taste of the chicken. This dish is often served with Peasant-Style Potatoes (page 477).

Asopao de Pollo

This soupy rice and chicken stew is a cousin to Arroz con Pollo and Paella (pages 293 and 520), but it’s much looser, and you must eat it right away; otherwise, the rice will absorb too much of the liquid and the stew will lose its soupy texture. For the ham, it’s best to buy a thick slice and cut it into chunks; you don’t want shreds of thinly sliced ham. Very lean bacon or a piece of smoked pork will work nicely too. Some ideas for varying this dish: Don’t add the chopped tomatoes, but put them in the bottom of each bowl before adding the soup; garnish with chopped fresh avocado; add fresh lime juice, onion, or chopped fresh cilantro leaves to taste, just before serving; or serve with chopped chiles in adobo (from a can) or Tomato-Chipotle Salsa (page 611).

Kari Ayam

This recipe doesn’t demand anything particularly exotic to produce an authentically Malaysian flavor. But instead of relying on canned curry paste as so many similar dishes do, this one offers a good deal more fragrance and sweetness by starting with fresh spices. If you’ve got access to a good market and would like to try a more unusual chicken curry from Southeast Asia, try the Red-Cooked Chicken (preceding recipe) or the Braised Duck or Chicken with Fresh Curry Paste on page 328, which incorporates Thai ingredients like dried shrimp or fish sauce. This curry is great with white rice but even better with the Malaysian coconut rice, Nasi Lemak, on page 515. You can make this curry a day in advance—keep it covered in the refrigerator overnight and warm it gently over low heat before serving.

Braised Chestnut Chicken

This popular winter stew is often served on special occasions, but I think its very nature makes an occasion special. Chestnuts, so rarely used in cooking here, add a rich and subtle sweetness to the dish. Fresh chestnuts are best, but frozen chestnuts are almost as good, and Asian markets carry dried chestnuts that are suitable as well. Forget canned chestnuts, though—they’re too soft to hold up to the long cooking. Like most braises, this is even better the second day, so feel free to make it in advance.

Choucroute de Poissons

A choucroute need not be meat, as is the more familiar one on page 404. Alsace, where the dish originated, has a long tradition of combining sauerkraut with fish. As is always the case, buy sauerkraut that is either sold in bulk or packed in plastic and contains no more than cabbage and salt. Serve with boiled potatoes.
