My variation is in the frosting. I'm not super crazy about the traditional approach. So thinking that this cookie is really a petite cake in disguise I developed a chocolate (Black) and peanut butter (Tan) buttercream frosting. Dee-licious!

Icebox Cookie Favors

Our food stylist, Kimberly Huson, gave us her grandmother's recipe for these light and delicious cookies. They can be made ahead (up to five days in advance); package in miniature wooden boxes tied with ribbon as favors for your guests.
Oatmeal, Chocolate Chip, and Pecan Cookies
Somehow, the addition of oatmeal to these chewy, gooey cookies makes me feel like they must be good for me! They certainly taste good, and that's usually my yardstick for making cookies — or anything else, for that matter.
Saucepan Brownies

Oatmeal Chocolate-Chip (and Bean!) Cookies
These cookies have a low-fat secret. They're full of beans! Idaho State University researchers in Pocatello replaced 75 percent of the butter with beans to create cookies with 105 calories and 3 fat grams (compared with 150 calories and 7 fat grams).
