Pumpkin Cake
We serve this seasonal cake from October through December, but it’s so good that people ask for it all year-round. I especially love it with the “Sassy” Cinnamon variation on the Vanilla Icing (page 136), though Cream Cheese Icing (page 144) and the Cinnamon variation on the Cream Cheese Icing (page 144) are good matches as well. Pumpkin Cake or cupcakes are a great dessert to contribute to Thanksgiving dinner, and are often a welcome variation to all the pies.
Banana Cake
This cake is a less dense version of banana bread, so it can be served in many ways. At Tribeca Treats we typically serve it with Chocolate Cream Cheese Icing (page 150), but it also tastes great with Cream Cheese Icing (page 144), the “Sassy” Cinnamon variation on the Vanilla Icing (page 136), or even consider baking it in a loaf pan, cutting off a slice, and serving it alongside chocolate mousse or whipped cream and fresh berries. The key to this recipe is to use overripe bananas. Typically, the browner the peel, the sweeter the banana has become. Since bananas are usually on the greener side in the grocery store, plan on buying them several days in advance of when you’ll be making the cake. Keeping them in a closed paper bag at room temperature will speed the ripening process.
Flourless Chocolate Cake
This four-ingredient cake deserves a spot on every home baker’s list of go-to dessert recipes. It’s a cinch to prepare, and the cake itself is a revelation—the edges and top develop a delicately crisp crust, while the center remains moist and fudgy.
Orange Cornmeal Cake
Olive oil and white wine may seem like unfamiliar ingredients in desserts, yet here they combine to produce a subtly fruity cake. For a crunchier topping, use coarse sanding sugar, available at many grocery stores, in place of the granulated sugar in step 3.
Glazed Lemon Pound Cakes
For best results, bring all of the ingredients to room temperature before mixing. When zesting and juicing lemons, grate zest first, then squeeze halves to extract juice. To make one large cake, bake the batter in a twelve-cup buttered and floured Bundt pan.
Glazed Chocolate Cake
Dusting the pan with cocoa powder (rather than flour) keeps the cake dark on the outside. To make chocolate shavings, scrape along the edge of a bar of chocolate with a vegetable peeler.
Blueberry Buckle
A BUCKLE IS AN AMERICAN COFFEE CAKE, and this sweet and moist version is a nice departure from muffins. Use fresh, juicy blueberries in the summer for a true blueberry flavor.
Honey Blank Slate Cheesecake
THIS CREAMY CHEESECAKE IS MUCH LIGHTER THAN the classic New York cheesecake. Instead of cream cheese, we use Beecher’s Honey Blank Slate, a naturally cultured, soft, fresh farmer’s cheese blended with Washington State honey, but a good substitute is fresh ricotta cheese mixed with honey. One tip for a successful cheesecake: Before serving, run a knife around the edge to separate it from the pan. This will help prevent the cheesecake from cracking. Top the cheesecake with Caramel Sauce (page 183) or Northwest Berry Syrup (page 221).
Hazelnut Torte
OUR EXECUTIVE CHEF AND PASTRY GURU (and hazelnut lover) Lura Smith has made this rich, dense torte for fifteen years to celebrate the hazelnuts of the region. The torte is made with agave syrup, a natural substitute for corn syrup. Agave syrup is available at specialty grocery stores.

Light Cherry Cheesecake

Lighter Pineapple Upside-Down Cake
GOOD TO KNOW In this fruit-topped, vanilla-scented cake, vegetable oil stands in for butter, reducing the amount of saturated fat in each portion. Swapping out a third of the all-purpose flour with whole-wheat flour boosts the fiber content.
Angel Food Cake
GOOD TO KNOW There’s a reason it’s called angel food cake—not only is it light as air and divinely delicious, it’s also virtually fat-free. The cake gets its lofty texture from a dozen whipped egg whites folded into the batter; it makes an excellent partner for fresh berries or berry sauce (see note). Mini Mocha Cheesecakes
SECRET INGREDIENT When puréed in a food processor, nonfat cottage cheese—high in protein but low in calories—becomes a smooth, creamy base for delectable cheesecakes such as this chocolate-espresso flavored version.
Caramel Cheesecake Bites
If you choose to bake only one cookie from this collection, make it these bites. The crisp cookie base provides the perfect contrasting setup to the luscious caramel-flavored dulce de leche—caramelized milk—hidden under the creamiest cheesecake layer. The final snazzy drizzle of dulce de leche is not essential, we know, but it makes the bites downright irresistible.
Double-Deep-Chocolate Hanukkah Layer Cake
A supermoist chocolate cake encased between layers of rich chocolate frosting is at once both a decadent treat and one of life's simple pleasures. And "simple" is an important descriptor here. Because it's an oil-based cake—like carrot cake—it doesn't involve equipment any more complicated than a whisk and a bowl.
Two stealth ingredients make this dessert different: unsweetened coconut milk and instant espresso powder. The former is amazing in its ability to add richness to the cake and stand in for cream in the ganache without overwhelming the dessert with coconut flavor. Espresso powder in the frosting magically highlights the depth of the chocolate.
Because this cake happens to be dairy-free, it's perfect for Hanukkah, and a godsend for anyone dealing with lactose intolerance. But the cake is so incredibly delicious, no one will notice the lack of cream and butter. They'll be too busy asking for seconds and thirds.

Tall, airy angel food cake is lovely just plain, but I usually serve it with Summer Fruit Compote (page 364) and whipped cream. Day-old angel food cake is delicious sliced thin and toasted.

This is a moist and versatile cake that stores well. It can be made in any format from cupcakes to a multitiered wedding cake.
Chocolate Pavé
Pavé is the French word for “paving stone.” Chocolate pavés are very rich, smooth, and dense. Chocolate cakes like this are often called flourless cakes, because they are completely gluten-free.
