Creamy Polenta
We love Marcella Hazan's "no-stirring" method for polenta — the following recipe is based on the one in her book Essentials of Classic Italian Cooking. It does require some stirring, but not the constant attention of traditional methods.

A rich-tasting low-fat chowder with lots of spicy curry flavor.
Saffron Risotto Primavera
Start this meatless meal with artichokes filled with a lemon mayonnaise for dipping, and serve the risotto with a mixed green and cherry tomato salad and a basket of toasted herb bread. To polish things off, set out a purchased raspberry tart.

Crab and Salmon Ravioli
Pasta, a recent addition to the Irish culinary repertoire, is fast becoming a favorite. At Longueville House in Mallow, Ireland, ravioli is taken to refined heights in this dish, which is served as an appetizer. They make it with large rounds of homemade pasta, but store-bought gyoza wrappers are a good substitute.
Rabbit Cacciatore
To most Americans, Ischia, off the coast of Naples, is relatively unknown. That's a shame, because for centuries this island's thermal springs have been luring savvy travelers for restorative dips; plus, the locals produce some of the best wine in the region. At La Pergola, a family-run inn located on a hill just outside of Forio, guests enjoy some of that homemade wine, along with artisanal jams and olive oil. La Pergola also serves one of the island's most popular dishes, rabbit cacciatore, or hunter's rabbit.
Chicken may be substituted for rabbit in this hearty dish.
Wuxi Spareribs
Wuxi, just two hours outside of Shanghai and often referred to as Little Shanghai, is a bustling city known for its silk. It was once called Youxi, meaning "has tin," but the tin reserves were depleted during the Han dynasty, and so Wuxi, which translates as "without tin," became its new name. These spareribs are one of the city's signature dishes.

Spaghetti with Turkey-Pesto Meatballs
This recipe can be prepared in 45 minutes or less. This new version of spaghetti and meatballs still goes well with the usual accompaniments: green salad, crusty garlic bread and some red wine. End with spumoni ice cream.
