Roast Chicken
This is one of our favorite meals. The hardest part is waiting for the chicken to finish resting before we dig in. We love the slightly bitter sweetness of broccoli rabe, although if you prefer you could substitute broccoli or cauliflower. And really, the best part of this preparation is the amount of crispy chicken skin; because the bird is roasted flat, all the skin renders and crisps, which makes for an all-around better chicken.
Roast Chicken Brine
This may seem like an unorthodox flavor profile, but roast chicken brine is delicious. Just as chicken stock is used as the base for myriad soups, this roast chicken brine pairs well with a variety of vegetables and fish. Unsurprisingly, it is also amazing with chicken and turkey. We are lucky enough to be able to buy inexpensive chicken backs at our local Whole Foods. If you can’t get backs or if wings are too expensive, chicken legs or thighs are sometimes an economical substitute. Even if you prefer to eat white meat, using dark meat for the brine will give you the most flavor.
Everything Spice Blend
Clearly, toasted milk powder was not part of the original Everything Spice Blend. We add it here to give it depth of flavor. That milk proteins also help it stick to the fish is an incidental benefit. The real bonus is the toasty flavor it imparts, which adds to the perception of the toasted bagel flavor in the finished fish or whatever else you may season with it.
Papeton d’Aubergines
Eggplant came to Europe from India sometime around the eighth century, possibly with seeds carried by Jewish merchants. Often called the Jew’s apple, the eggplant has played an important role in Jewish cooking since early times. The old recipes found in the Vaucluse, such as the Ladino almodrote de berenjenas, are present today throughout the Sephardic world in the Mediterranean. Although the eggplant is sometimes sautéed in this dish, I prefer roasting it over a fire to bring out the smoky flavor, and then chopping it into chunks with two knives, a technique I learned from Sephardic French cooks. You can also roast the eggplant in an oven then pulse it in the food processor. With the increasing number of vegetarians even in France, this dish is becoming very popular, “modernized” with pesto, crème fraîche, or anchovies, or covered with tomato sauce. A purist, I like to serve it the old way—simply, with a salad.
Membre d’Agneau à la Judaïque
The oldest recipe for lamb I could find is for a shoulder of mutton or lamb—a membre de mouton à la judaïque—which comes from Pierre de Lune’s 1656 cookbook, Le Cuisinier, où Il Est Traité de la Véritable Méthode pour Apprester Toutes Sortes de Viandes . . . This recipe calls for lots of garlic and anchovies to be embedded in a shoulder of lamb with herbes de Provence. The pan juices are reduced with the juice of an orange and enhanced with white pepper and orange peel. The title of this recipe is one of the first known uses of “judaïque” (“Jewish style”) in a French recipe. Don’t forget that, “officially,” no Jews lived in France at this time. Here is my adaptation 350 years later.
Stuffed Breast of Veal with Parsley and Onions
This Veal dish is a big favorite of butcher Jacques Geismar’s Jewish clientele. You can substitute matzo for the bread at Passover, and, if you like, add raisins and apples to the stuffing. This dish is popular for the Sabbath or the high holidays in France, the way brisket or stuffed turkey is in America. Try the stuffing for your next turkey.
Alsatian Sweet and Sour Tongue
In France, for Rosh Hashanah and Passover, tongue, with its velvety texture, is often served with a sweet-and-sour ginger sauce. In some homes the tongue is put on the table as a symbol of the wish for success in the New Year. Spicy-sweet sauces often accompanied pickled meats in Alsace, where sugar was first used as a condiment rather than as a dessert sweetener. By the time the meat had been pickled, desalted, and then cooked, it had lost much of its flavor, so sugar, ginger, and other spices ensured a good taste. Jews have a long history of treating tongue, an often scorned cut of meat, as a delicacy. It is preserved and pickled in a salt brine with garlic, pepper, spices, sodium nitrite, and sodium erythorbate. The tongue is then boiled, the skin peeled off, and slices of meat are served with a sauce.
Gala Goose
Rashi teachers us a great deal about cooking in the eleventh century. In the Talmud a rabbi “told his attendant: roast a goose for me, and be careful of burning it.” Rashi explains that “they would roast geese in their small ovens which opened on top. The food would be suspended from the opening, which would then be sealed until the food was roasted.” One hundred fifty years ago, goose was the meat par excellence in the Jewish communities of Alsace- Lorraine and southern Germany. In my grandmother’s notes in German on roast goose, she includes a recipe for “hurt goose,” meaning goose roasted without its outer skin and the fat underneath, which of course was used to render the fat and to make gribenes, crispy rinds, my grandfather’s favorite treat. They also carefully separated the skin from the long neck, stuffed it with meat, onions, flour, and spices, and cooked it as a Sabbath delicacy. Ariane Daguin, head of D’Artagnan Foods, had me try this crispy recipe from her mother, a French- Polish Jew. To make the goose less fatty, Ariane cooks it very slowly, leaves it overnight in the kitchen so that the fat can jell, then roasts it in a hot oven to crisp the skin, the absolutely most delicious part of the goose.
Canard aux Cérises
The cookbook cited above includes several recipes for roast duck and sweet red cherries, the variety that grows in Alsace being Reverchon or Coeur de Pigeon (Pigeon’s Heart). I use Bing or Montmorency cherries, and you can also substitute peaches or rhubarb. If using rhubarb, just increase the amount of sugar to taste. I use cherries with pits, because they add more flavor, but remember to warn your guests!
Tunisian Carrots with Caraway and Harissa
When Alexander Zbirou came to France from Tunisia in 1966 to study marketing, there were few good kosher restaurants in Paris. In 1976, he opened a French restaurant, called Au Rendezvous/La Maison du Couscous, in the Eighth Arrondissement near the Champs-Élysées. Four years later, he turned it into a kosher Tunisian restaurant, the only one of its kind in the quarter. Today, there are more than thirty-eight in the Eighth Arrondisement. “I saw Jews arriving in the quarter,” he told me over lunch at his restaurant. “They came, and I was waiting for them. It was home cooking for Tunisians and Ashkenazim. After all, there are lots of mixed marriages here in France.” In 1988, his mother, Jeanne Zbirou, immigrated to Paris, and is now directing the cooking in the kitchen. Well into her eighties, she comes to the restaurant every day to work with her son. His restaurant, although technically kosher, does not close on Friday night or Saturday. “I feel that we are rendering a service to kosher clientele, to give them a kosher meal for the Sabbath,” he said. Other restaurants, under the supervision of the Parisian rabbinical authority, the Beth Din, are either closed for the Sabbath or open only to customers who pay in advance. Sitting down at the restaurant, we were first served an array of kemia, similar to the ubiquitous mezze at Arab restaurants. We began with flaky brik, filled with potatoes, parsley, and hard-boiled eggs (see page 30). At least a dozen salads followed, served on tiny plates, all brimming with bold colors and flavors. Some of my favorites were raw artichoke slivers with harissa, oil, and onions; turnips with bitter orange; and this delicious carrot salad with harissa and caraway seeds. When I asked how much salt they used to cook the carrots, Jeanne said, “Enough salt to make a raw egg rise in water.” In my own kitchen, I prefer roasting the carrots, because it brings out the sweetness of the vegetable.
Roasted Beet Salad with Cumin and Cilantro
In markets all over France, I saw stalls with freshly boiled and peeled beets, which saves cooks from dyeing their hands the telltale pink that comes from handling beets. Since we seldom have this convenience in America, I prefer to roast my beets to intensify their earthy flavor, and then carefully peel and cut them. Beets and cumin marry well and look beautiful when sprinkled with lots of green cilantro.
Beet, Potato, Carrot, Pickle, and Apple Salad
When I visited my cousins in Annecy, they served me this unusual salad. Its variety of colors and textures is stunning. As with many other cooked salads, it tastes even better the next day, making it a great dish for dinner parties or picnics. The kosher dill pickles came from shopping trips to Geneva and were a big treat.
Roasted Moong Dal with Mustard Greens
This is a Bengali specialty that requires that the moong dal (hulled and split mung beans) be lightly roasted first and then, when the dal is almost done, quick-cooking greens such as mustard greens, spinach, or green chard are added to make it more nourishing. There are several tiny steps required here, but each is simplicity itself. I find that most split peas and beans are so clean these days that they need no picking over. You do need to rinse them off. In the case of this recipe, the rinsing is done after the roasting, for obvious reasons. Bengalis might use mustard oil for the final seasoning. It complements the mustard greens and adds its own unique flavor. But since it is frowned upon by Western food authorities for the harmful acids it contains, I have started using extra virgin olive oil instead, another strong flavor, though a different one. For many peasants, such a dal, served with rice and perhaps followed by a yogurt dessert, makes for a rich, ample meal. You may add a fish dish.
Whole Chicken Baked with an Almond and Onion Sauce
This is an oven-cooked version of the Indian classic Murgh Mussallam—a whole chicken cooked in a rich spicy sauce. Although Indians like their chicken skinned, partly to let the spices penetrate better, I have not bothered too much with that in this book, just to make life easier. But it would be good to do it for this recipe, as this is a dish for special occasions. You can ask your butcher to skin the chicken, but it is really not difficult to yank most of it off yourself. The wings are a bit troublesome, so I just leave them alone. I might go to town here and serve Black Beans, Yellow Basmati Rice with Sesame Seeds, and Sweet-and-Sour Eggplant. On the other hand, you could treat this as a spicy roast and just have parsley potatoes and fresh summer peas!
Chicken Roasted With Ginger and Cilantro
Coat chicken legs with a spicy fresh-ginger– and cilantro-perfumed yogurt, then bake for an easy Indian weeknight dinner.
Tomatoes Stuffed with Roast Peppers, Tuna, Capers, and Olives
This version of the Tunisian meshweya (page 85) can be served hot or cold. I prefer it cold.
Roasted Mixed Vegetables
This is one of my favorite ways of cooking vegetables for a dinner party. You can do most of it in advance and put them in the oven again 1/2–3/4 hour before serving.
Roasted Tomatoes
Moroccan tomates confites have a deliciously intense flavor. Serve them hot or cold with grilled meat or fish or as an appetizer.
Whole Roasted Peppers with Yogurt and Fresh Tomato Sauce
Bell peppers change in color as they ripen from olive, pale, and bright green to vivid yellow and red. The red ones are the ripest and sweetest. In Turkey they are roasted or deep-fried whole and served hot as a first course accompanied with yogurt or with a tomato sauce. There is no need to peel them. A long, pointed, piquant (but not hot) variety is also prepared in the same way.
Leg of Lamb with Onions, Potatoes, and Tomatoes
My aunt Latifa and uncle Mousa lived in a villa in a suburb of Cairo. It was large and housed their extended family. There was no oven. Much of the cooking was done over a mangal (portable outdoor grill) and a Primus oil heater, and trays were sent off daily to the baker to be cooked in the bread oven. This dish was sent to the baker.
