Roasted eggplant spreads and salads come in many variations throughout Greece and are usually embellished with local flavor. In the North, yogurt is often added to the eggplants, for example, throughout the Cyclades, it is the ubiquitous caper and tomato that season this delicious dish.

Tomato "Sushi"
Chef Christoforos Peskias turned rice-stuffed tomatoes inside out and came up with something that resembles sushi topped with tuna. He forms rectangular "sushi" using a special mold; we found that a scoop works well for the home cook.

Grilled Spareribs with Cherry Cola Glaze
Before using the cherry cola, pour it into a bowl and allow it to stand at room temperature until no longer effervescent, about four hours. Start with a relish platter, then serve the spareribs with the State Fair Potato Salad and corn on the cob. What to drink: Tall glasses of iced tea or frosty mugs of lager.

Roast Maple-Glazed Salmon
A quick 2-hour marinade of maple syrup, mustard, and rum turns the salmon dark and glazes the flesh. Boneless sides of Atlantic farm-raised salmon are available everywhere year-round, they're consistently good, and they can be prepared simply: roasted in a hot oven. You'll need parchment paper for this recipe, available at some supermarkets or at specialty food shops.
Rib-Eye Roast with Chianti Pan Vegetables and Balsamic Glaze
The glaze can be made a day ahead; it is intensely flavored, so use it sparingly. Take the roast out of the fridge one hour before cooking. What to drink: Merlot or Australian Shiraz.
