Herbal Tea
Teas are a wonderful way to use seasonal herbs, so experiment with your favorites. The measurements are flexible; depending on the freshness and strength of the herbs, you may need to add or subtract.
Moroccan Mint Tea
Mint tea is considered the national drink of Morocco, although tea was introduced there only as recently as the 1850s, brought from the Far East by British merchants. Fresh mint and sugar are always added, and the tea is served in small glasses.
Ethiopian Spice Tea
This is more of an infusion than a true tea, since it isn't made with tea leaves. You will have leftover spice tea to store.
