Tamarind Ketchup
Tamarind provides acidity with a delicious fruity tartness. It is mainly used in Indian, Thai, and Mexican cooking, although it grows in many tropical climates, including Florida. Look for the caramel-colored tamarind concentrate or paste in markets, as extracting the fruit from the pods is labor-intensive. Use the ketchup on the Indonesian Corn Fritters (page 155), Indian Spiced Scrambled Eggs (page 75), and burgers or grilled shrimp. For all of the preserving recipes, including this one, use kosher salt; unlike table salt, it is free of additives that can discolor ingredients.
Tofu Banh Mi Sandwiches
Banh mi sandwiches are a Vietnamese street food. Instead of the typical pork and mayonnaise, this version features baked tofu, an anchovy-miso dressing, and cucumber pickles. A key element of banh mi sandwiches is fresh bread—day-old bread is too dry. The best bread to use is a thin-crust white flour baguette that won’t overwhelm the sandwich fillings. Try making these sandwiches for a July picnic.
Watermelon Gazpacho
This sweet and tangy cold soup is one of Lucid Food’s signature dishes. For catered events, we often serve it in shot glasses as an hors d’oeuvre. A guest once suggested we top them off with vodka, and so a wonderful new take on the Bloody Mary was invented. You can make this recipe a day ahead and reseason it just before serving.
Lemonade with Lemon Balm and Lemon Verbena
This recipe was inspired by a visit to the Middle East. The day was hot and dry, and someone gave me lemonade with basil and mint. I have been putting herbs in tea and lemonade ever since. Although you can experiment using all sorts of different fresh herbs, this combination makes for a relaxing tonic, as both lemon balm and lemon verbena are known for their calming properties. On a warm night, substitute this lemonade for a glass of white wine, or turn it into a cocktail by adding white wine or champagne.
The Best Granola Ever
This granola is better than anything I have bought in a store (as homemade foods so often are), if that helps explain its boastful name! I use a mixture of nuts—everything from cashews, pecans, almonds, and peeled hazelnuts to walnuts. Pistachios, however, will burn quickly, so if you’re using them, add them at the end and let them bake for just a few minutes. This granola keeps for a long time in the refrigerator, so double the batch if you like. It makes a great gift, too! Serve it with milk or yogurt and fresh fruit.
Creamy Red Kuri Squash Soup
I look forward to seeing the stunning array of brightly colored winter squash that appears at the market every autumn. Of all the varieties, red kuri squash (shown below) is my favorite for savory dishes. It has a rich, full flavor that makes this simple soup exceptional. The soup lasts for several days in the refrigerator. To reheat, add a little stock or water, because it will thicken over time.
Green Smoothie
Take a break from cooking and make a satisfying meal from raw fruits and vegetables. This drink takes about twelve minutes to make from start to finish. It’s a great way to get your greens without any work, and I like the slightly fibrous texture the greens impart. The smoothie is good for two days if you want to have it for a few meals. After storing it overnight in the refrigerator, just reblend it for a few seconds. As different fruits come into season, try berries instead of oranges, or a ripe peach instead of the banana. In hot weather, blend in several ice cubes.
Apple Pomegranate Sangria
Exotic, jewel-like, and demanding considerable labor to penetrate their maze of pulp, pomegranates are a ravishing winter treat. A constant on the Lucid Food cocktail menu during cold weather, this drink pairs well with food but also stands on its own. You can make the sangria the day before, but wait until the day you serve it to add the orange slices, as the pith can cause the drink to turn bitter. Use a cheap red wine; I prefer a rioja or a tempranillo.
Bittersweet Chocolate Cake with Prune Purée and Hazelnuts
After my company catered a party spotlighting foods from the state of Oregon, we were left with several pounds of fresh hazelnuts from the Willamette Valley, the capital of U.S. hazelnut production. We added the nuts to a flourless chocolate cake, and the result was this dark, rich confection with fruity undertones. Maple sugar, which is simply dehydrated maple syrup, is sold at most health food stores, but you may substitute any dry sugar. Serve this cake with vanilla-spiked whipped cream.
Tortilla Española
Tortilla Española is an indispensable dish: It makes a great breakfast, goes well in a sandwich, and makes a hearty hors d’oeuvre when cut into small squares. The only challenge is removing the tortilla from the pan intact, but you can cheat by waiting until it’s cold. Embellish the tortilla with Stinging Nettle Pesto (page 115), Cilantro-Jalapeño Sauce (page 184), or plain ketchup. For a light meal, serve the tortilla alongside the Puntarelles with Anchovy Dressing (page 156) and fresh bread.

Shrimp Shumai
Shumai is a Chinese import that’s a popular dish in casual restaurants, and is also a staple of Japanese homes, where it’s enjoyed as a snack or a dinnertime side dish (but never as the main course). Leftovers hold up well and can be polished off the next day, or packed into a lunchbox or picnic basket and eaten at room temperature. You can also freeze uncooked shumai for up to a month. Follow the instructions below to steam frozen shumai—no need to defrost; simply add a couple of minutes to the cooking time.
Gyoza
The funny thing about gyoza is that I never cooked them—until I moved to America. Back home I always went out for these extremely popular, garlic-infused pan-fried dumplings, which have a special place in the hearts of Japanese. When I arrived in America, gyoza was one of the comfort foods I missed the most, so I started cooking them at home. That’s when I realized how easy it is to prepare perfect gyoza: they simply need a fragrant, juicy, flavor-packed filling; crispy skin on the bottom and silky skin on top; and a spicy dipping sauce. Now my kids and I love to make homemade gyoza together. This recipe is the classic pork-filled version that I grew up with. Keep in mind that you can conveniently freeze uncooked gyoza for up to a month. To prepare, follow the fry-steam technique below with the frozen dumplings—no need to defrost. Just extend the cooking time by 3 minutes. Note: You can also prepare this dish without pork belly. Just substitute more ground pork (1 pound total). But I love using pork belly here because it adds so much flavor and richness to the gyoza.
Chicken Tatsuta-Age
America’s Deep South isn’t the only place that loves fried chicken: tatsuta-age is Japan’s own delicious version, which my family and I are addicted to! Our fried chicken is marinated with traditional Japanese aromatic flavorings and served with a refreshing and savory slaw. You can enjoy this versatile dish hot and crispy, or pack it for a picnic and eat it at room temperature—it travels extremely well. Tatsuta-age is also a perfect leftover food. It keeps in the fridge for several days without losing its flavor, and you can turn the boneless chunks into a delicious sandwich. When I was a kid, my mother often included this fried chicken in my lunchbox, a treat I happily share with my own school-age children today. Don’t use the breast for this dish—the legs and thighs have much more flavor. Be sure to keep the skin on, too.
Beef Harumaki
In Japan, these crispy pan-fried rolls run a close second to gyoza as a favorite side dish to a steaming bowl of ramen. Harumaki is often prepared with shrimp or pork, but I like using beef, which beautifully complements the layers of flavors in this recipe. Besides, the irresistible combination of beef and peppers reminds me of my adopted hometown of Chicago’s famous Italian beef sandwiches. Harumaki also freezes well. The trick is to assemble the rolls completely before sticking them in the freezer. You can even fry the harumaki while the filling is still frozen. I always keep some frozen rolls on hand for an impromptu midnight snack.
Spaghetti Bolognese
I still remember the first time I tasted this dish. I was sixteen years old and working my first cooking job to earn some pocket money at a restaurant in my hometown that served European food. Until then, I had almost no exposure to Western cooking (I hadn’t even tried pizza yet!). This dish was a bit of a culture shock for me, but I quickly became enchanted with Italian pasta. For the recipe, you can substitute ground veal or ground pork, if you like. Any leftover sauce can be frozen for up to a month.
Dashi
Here is my standard dashi recipe. The kelp is loaded with savoriness, a taste we call “umami” in Japan. This recipe is for 2 quarts of dashi, but you can easily double the quantities and freeze leftovers for up to 2 months.
Soba Noodles
My brother-in-law and I have a long-standing ritual whenever I visit my family in Japan: he welcomes me home with a plate of his own freshly made soba noodles. I can’t think of a more gracious—and delicious—greeting. I love the bright buckwheat flavor and irresistible nutty, sweet aroma of fresh soba, a sensation you simply can’t fully experience with dry noodles or fresh-frozen. This recipe is a bit challenging, true, but worth it. A few notes: First, professional soba makers use a “soba kiri” to cut the noodles, an expensive, specialized blade 12 inches long and 6 inches wide. But at home, a large kitchen knife works perfectly. Second, cooks in Japan traditionally use a lightweight wooden box as a guide for cutting soba, but anything lightweight with a straight edge will work fine, even a plastic ice cube tray. And finally, but most important: cut noodles should be cooked and served immediately. You can freeze any unrolled dough, well wrapped, for up to a month, or store fresh dough in the refrigerator for a few days.
Shio Base
Use this base for Shio Ramen (page 22) and other recipes. You want this broth to be light colored, which is why I use “white” soy sauce, an almost clear liquid, rather than typical caramel-hued soy sauce.
