Spice Cake

Carrots and fruit juice add a healthful twist to this very easy cake.

Ingredients

Cooking spray
1 18.25-ounce box spice cake mix
6 large egg whites
2 4-ounce jars baby food pureed carrots
1 cup unsweetened apple juice or orange juice
1/2 cup sifted confectioners’ sugar

Preparation

  1. Step 1

    Preheat the oven to 350°F. Lightly spray a 15 x 10 x 1-inch rimmed baking sheet with cooking spray.

    Step 2

    Put the cake mix, egg whites, carrots, and juice in a large mixing bowl. Mix using the package directions. Pour the batter into the pan.

    Step 3

    Bake using the package directions.

    Step 4

    Just before serving, dust with the confectioners’ sugar.
