Roasted Broccoli with Onions

Roasting brings out the best flavor in both the broccoli florets and the onion slices in this side dish.

Ingredients

Cooking spray
1 large onion (about 8 ounces), sliced lengthwise
1 teaspoon olive oil and 1 teaspoon olive oil, divided use
3 cups broccoli florets (in 2-inch pieces)
1 teaspoon fresh lemon juice
1/8 teaspoon salt

Preparation

  1. Step 1

    Preheat the oven to 400°F. Lightly spray a large shallow metal baking pan with cooking spray.

    Step 2

    Put the onion in the baking pan. Drizzle with 1 teaspoon oil. Toss to coat. Spread the onion in a single layer.

    Step 3

    Roast for 10 minutes. Remove from the oven. Stir the onion.

    Step 4

    Meanwhile, in a medium bowl, combine the broccoli and remaining 1 teaspoon oil, tossing to coat. Stir into the roasted onion.

    Step 5

    Roast for 10 minutes. Stir. Roast for 5 minutes, or until the onion and broccoli are tender and browned. Transfer to a medium bowl.

    Add the lemon juice and salt, tossing to coat.
