Mojito

I have had more bad mojitos in the last couple of years—since they became popular—than I had had in my entire life previously. This is the real thing and a fantastic cocktail. There should be enough mint to chew on.

Ingredients

About 2 tablespoons Sugar Syrup (page 660), or to taste
1 1/2 ounces good-quality dark rum
2 tablespoons fresh lime juice, or to taste
1/4 cup chopped fresh mint leaves, or more

Preparation

  1. Step 1

    Combine all the ingredients over ice in a glass. Alternatively, combine all the ingredients except the mint in a blender with some crushed ice. Blend.

    Step 2

    Taste and adjust the seasoning, then serve.
