This is the most tender cut of lamb. Buy 4 loin lamb chops and remove the bones. Cut off the outer layer of fat before cooking.

Ingredients

3 tablespoons chopped fresh parsley
1 tablespoon finely chopped green onion
2 teaspoons finely chopped garlic
2 tablespoons olive oil
1/3 cup whole-wheat bread crumbs
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon dried thyme
Salt and ground black pepper to taste
Four 6-ounce pieces loin of lamb

Preparation

  1. Preheat the oven to 425 degrees. Combine the parsley, green onion, garlic, oil, bread crumbs, cumin, turmeric, thyme, salt, and pepper on a plate. Stir to mix. Press the seasoning mixture onto both sides of each piece of lamb and place in an 8-inch square glass baking dish. Bake, turning the pieces of lamb once, for a total of 15 minutes for medium-rare doneness or 20 minutes for medium doneness.
