Candied Flowers

3.5

(3)

Sugared flower petals are easy decorations for cakes, tarts, and cupcakes; they're just a little time-consuming. Be certain to use only nontoxic and organic (pesticide-free) flowers, such as bachelor's button, nasturtium, calendula, chamomile, violet, snapdragon, and Johnny-jump-ups.

Ingredients

edible flowers
superfine sugar
egg whites, at room temperature
water

Preparation

  1. Step 1

Brush petals with an egg white that is slightly beaten with a couple of drops of water.

    Step 2

Hold the petal with a tweezer, and sprinkle with superfine sugar. Tap the tweezer to remove excess sugar.

    Step 3

Remove to a rack to dry completely. Store in an airtight container.

    Step 4

Sugared flowers can be made in advance and stored up to one month.
