Ingredients

3/4 cup Forbidden Rice*
1 1/2 cups water
2 teaspoons Asian sesame oil
*Available at specialty foods shops and by mail order from Kalustyan's (212-685-3451).

Preparation

  1. Step 1

    Bring rice and water to a boil in a 1 1/2- to 2-quart heavy saucepan. Cover pan and cook rice over low heat until tender and most of water is evaporated, about 30 minutes.

    Step 2

    Let rice stand, covered, off heat 10 minutes. Fluff with a fork, then stir in sesame oil and salt and pepper to taste.
