Ingredients

2 2/3 cups water
1 1/3 cups Texmati rice* (American basmati) or brown basmati rice**
1/4 cup golden raisins
1 cinnamon stick
1 teaspoon mustard seeds
3/4 teaspoon salt
1/2 cup thinly sliced scallion greens

Preparation

  1. In a 3-quart heavy saucepan stir together all ingredients except scallion and bring to a boil. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes. Fluff rice with a fork and stir in scallion.
