Skillet-Cooked Sweet Corn and Lima Beans

Sweet corn and fresh lima beans are natural garden partners and one of my favorite vegetable combinations. I like traditional American succotash (originally a Native American dish, in fact), in which the vegetables are cooked together in water, milk, or cream. But limas and corn are especially delicious when prepared by my covered-skillet method, with olive oil and garlic (and a bit of peperoncino). You must use fresh-cut corn kernels and lima beans right out of the shell for this dish—frozen corn and limas will get mushy and just don’t have the flavor. Cutting corn kernels off the cob is easy. For a fast method, see below. And shucking lima beans is a pleasant task that I enjoy. Though I admit that Gianni, my mother’s boyfriend, is always happy to help me when I’ve got pounds of beans to shell.

Frantoiana

This is a traditional Tuscan soup from the area of Arezzo, made with bread grilled over an open fire and virgin olive oil, unfiltered, straight from the press—the frantoio. Believe me, a pot of beans never tasted this good. As bread is a principal ingredient here, use one with fine flavor, preferably an artisan-baked loaf that has great crust and an airy crumb with lots of holes. Old bread—pane vecchio—is best, because it is already dry, but day-old or even fresh bread can be used.

Zucchini and White Bean Soup

You can turn this soup into a main course by adding pieces of cooked chicken. Small shrimp are another delicious enhancement: cut about 1/2 pound of shelled, cleaned shrimp into 1-inch pieces, and stir them into the pot when the zucchini is tender. Remove from the stove and let the shrimp cook in the residual heat.

Chicory and White Bean Soup

Make soup with any of the greens (and reds) in the chicory-endive family, including the various kinds of radicchio now in the markets, escarole, curly endive (or frisée), or Belgian endive, as well as unrelated leafy vegetables such as Swiss chard, spinach, or arugula. The procedure is the same, though cooking times will vary.

Braised Swiss Chard and Cannellini Beans

Swiss chard is a vegetable that is much appreciated in Maremma. Even though it is readily available in most supermarkets, it is not much used in the States. I love it, and suggest that whenever you are thinking spinach you should think of substituting Swiss chard. It usually comes in a bunch tied around the stalks. Look for young, tender bright-green leaves and thin stalks. This recipe, cooked with cannellini beans, makes almost a complete meal. In Maremma, this dish is served with grilled meats. I love grilled sausages with it, but I also like it topped with a poached egg, a slab of grilled crusty Tuscan bread, and a drizzle of olive oil—it makes a great lunch. This dish is good just off the stove, but it gets better when it rests a bit and is reheated. It will keep in the refrigerator for a few days, and also freezes very well.

Baked Butter Beans

My mom always made these sticky-sweet baked beans for picnics and cookouts. I make them year-round with most any type of cooked dried beans, including navy, pinto, or great Northern. In the summer, though, fresh and tender butter beans are my favorite. When entertaining, I often give this homey dish an air of sophistication by baking and serving it in individual-size ramekins or custard dishes topped with slices of pork belly in place of the bacon.

Summer Succotash

Succotash is a traditional stew of fresh butter beans and corn made velvety by the last-minute addition of butter. The basics—beans and corn—are a must, but beyond that it seems most every Southern family has its own particular version. I typically let the farmer’s market determine the mix of vegetables, but this rendition, with sweet bell peppers, basil, and summer squash, is one of my all-time favorites.

Brunswick Stew

Rich and meaty Brunswick stew is a true Southern classic. This streamlined rendition of my mom’s perfect version makes a huge amount of food—but to my thinking, that’s the point of stew. It tastes even better the next day, so it’s a great make-ahead meal if you are planning to have weekend visitors or feed a big crowd. You can also pop some in the freezer for a quick-fix weeknight supper another time.

Five-bean Picnic Salad

If you’re going to buy and chop up all the vegetables for this salad, you might as well make a big batch that will last you a few days. This colorful, incredibly satisfying combination keeps well and makes for a terrific side dish to just about anything you care to sauté, fry, or grill. And because this salad feeds a crowd, it’s perfect for picnics and backyard barbecues.

White Bean Hummus

In this hummus recipe, I use white Italian beans instead of chickpeas for a Mediterranean twist on the Middle Eastern classic. Luscious Garlic Confit (p. 193) infuses the dip with a sweet, rich flavor. This creamy, healthful puree is delicious with crudités, Seasoned Pita Crisps (p. 89), blue corn tortilla chips, or on a sandwich with grilled vegetables and (of course) hot sauce. White Bean Hummus can also partner with a few other items to create a beautiful antipasto platter. Just add, for example, roasted red pepper strips, marinated olives, and a few tablespoons of roasted garlic cloves. Don’t be surprised if this becomes one of your new (snacking and entertaining) staples.

Chicken with Cranberry Sauce

Thyme and sage give this sauce savory flavor, to complement the tartness of the cranberries. Loaded with antioxidants and vitamin C, cranberries are believed to help boost the immune system.

Shepherd’s Pie

You’re probably skeptical about how such a standard meat and potatoes dish as shepherd’s pie could be made vegetarian, but it can definitely be done. This dish is great comfort food—white beans and veggies baked bubbly hot with a golden mashed potato crust.

White Bean Salad

Okay, this salad is really dinner-for-one-and-lunch-the-next-day. I got the recipe from my host sister in Germany, who says that the longer the salad is in the fridge, the better it tastes. I told her that I don’t think we can tell that to college students in the U.S., because some of them will end up with science experiments! Still, you could even make a double or triple batch and keep it in the fridge for a quick lunch or to bring along to a barbecue.

Penne with Pan-Roasted Tomatoes and White Beans

This pasta dish is pretty spectacular. It’s just a few ingredients that combine to make something fabulous—and that, in a nutshell, is the secret of Italian cooking. The roasted tomatoes and roasted garlic are rich and delicious, the beans add protein and texture, and the basil brings a fresh flavor.
