Turkey Chowder with Wild Rice, Crimini, and Pancetta
For extra flavor, add leftover (plain) gravy or stuffing to the soup. If using stuffing, stir in one to two cups half an hour before the end of the cooking time. If using gravy, add it just before the soup's done.

Southeast Asian Turkey Burgers
Looking to jazz up a backyard barbecue? The bold flavors in this burger will definitely get guests talking. A paste of lemongrass, garlic, ginger, and serrano chile enlivens ground turkey, while also helping to keep it moist. If you don't have a mini food processor, don't be discouraged. It may take longer, but it's still worth the effort to finely chop the ingredients and mash them to a paste using a mortar and pestle. A spicy lime vinaigrette takes the place of traditional condiments.

Tortilla Casserole with Turkey
This tortilla casserole is a great holiday dish to prepare when you want to use up leftovers. Miguel uses shredded leftover turkey as well as whatever vegetables remain from the holiday feast. It is a reliable dish for brunches or luncheons, paired with a seasonal salad. The tangy tomatillo sauce in this dish can also be used in recipes for other chilaquiles as well as Enchiladas Verdes. Though often referred to as "green tomatoes," tomatillos are members of the gooseberry family.
