Potato Pierogi with Cabbage and Bacon

In many parts of the country, pierogi, Eastern European dumplings, are sold fresh and frozen in supermarkets. Like premade egg rolls, they've become a convenience food for cooks with limited time. Served with the cabbage and bacon, they're all you need for dinner. These turnovers are typically deep-fried, or boiled and then panfried. Instead, we used a method often employed for cooking frozen Asian dumplings and found it works very well. If pierogi aren't sold in your supermarket, try a local Polish or Eastern European deli.

Arroz con Pollo

ALSACE Serve with a green salad for a lovely lunch or light supper. What to drink: Gewürztraminer or a dry Alsatian Riesling.

Lobster and Shrimp Cioppino

We recommend using a sturdy food mill (available at cookware stores) to help produce a thick stew base from simmered vegetables and fish. Alternatively, you can use a large heavy-duty mesh sieve to strain the seafood broth. Then push through enough fish and vegetables to make 13 cups of stew base. Serve cioppino with sourdough toasts.

Linguine with Chicken and Sun-Dried Tomatoes

"I come from a big family, so I learned how to cook to help my mother feed all of those hungry mouths," says Molly Shannon Daum, Evergreen Park, Illinois. Pasta and Bean Soup

Pasta e Fagioli Venetians prize a soup made thick by using mashed beans. This recipe is based on the preparations at Venice's Fiaschetteria Toscana and Osteria alla Bomba. A tablespoon of salt may sound like a lot, but it is needed to bring out the beans' flavor.

Pan-Grilled Sausages with Apples and Onions

Steamed spinach, mashed potatoes, and oatmeal cookies would fit the rustic theme.

Corn, Cheese, and Chili Tamales with Tomatillo-Avocado Salsa

Poblano chilies (fresh green chilies), tomatillos (green tomato-like fruits), dried corn husks, and Masa Harina are found at many supermarkets and Latin American markets.

Roasted Red Onions

You can cook the onions up to one day ahead. Just before serving time, rewarm them in the oven while the roast rests. This recipe is an accompaniment for Black Pepper-Crusted Standing Rib Roast au Jus.

Country Sausage and Sage Dressing

This recipe is intended as a baked dressing to accompany the Thanksgiving turkey . It can be used as stuffing (a practice I do not recommend for turkey), if you desire. It also makes a good stuffing for capon or pork.

Composed Greek Salad

Donna Knowlton of Atlanta, Georgia, writes: "As the oldest of five children growing up in rural West Virginia, I was always helping in the kitchen. Pasta with Sausage, Red Onion, and Lentils

"For my son's birthday, I'd like to make a pasta, sausage, and lentil dish that we both ate during an Italian vacation," writes Miriam Scott of New York, New York. "We stayed at Locanda l'Elisa, located just south of Lucca in Tuscany. The hotel's greenhouse-like restaurant, the Gazebo, served the pasta dish that was so wonderful. Could you possibly track down the recipe? " Adding some of the pasta's cooking water to this dish gives it a creamy quality.
