Lemongrass

Thai Shrimp Curry

If you thought you couldn't cook Thai food at home, this colorful and slightly spicy curry-a bit of a cross between a soup and a stew-will change your mind. It's a cinch to whip up after work and intriguing enough to impress your friends. Begin dinner with frozen egg rolls or take-out ones from a Chinese restaurant, and finish things off with ice cream or sorbet topped with chopped tropical fruit. GewÜrztraminer or Thai beer complements the menu nicely.

Aromatic Rice-Noodle and Beef Soup

In its traditional form, this classic Lao soup is made with noodles rolled out and cut to order for each bowl. It is still excellent made with dried rice noodles. You can substitute fish, chicken, or pork for the beef, but rice noodles are an essential ingredient. The Lao like a considerable amount of lime juice in their food—here a range is given so that you can flavor the soup to your taste.

Coconut-Curry Sauce

This would also be delicious paired with chicken or shrimp. This recipe originally accompanied Sake-Marinated Sea Bass with Coconut-Curry Sauce.

Chicken in Lemongrass Sauce

Serve rice with this dish from Le Colonial, a Vietnamese restaurant in West Hollywood.

Thai-Spiced Watermelon Soup With Crabmeat

This light, spicy soup is delicious hot or chilled. The sautéed aromatics turn the broth a rich red-orange, more reminiscent of tomato than watermelon. See if your guests can guess the main ingredient. Active time: 1 hr Start to finish: 1 hr (3 hr if serving chilled)

Coconut Sauce

If most of the coconut sauces you've encountered have been heavy and cloying, this one — light and frothy, with delicate flavor — will be a delicious surprise. It would also be perfect for spicing up poached skinless boneless chicken. This recipe is an accompaniment for Pistachio Sea Bass with Crab Salad and Coconut Sauce .

Stir-Fried Lemongrass Beef with Asian Greens

Freezing the meat for 30 minutes will make it easier to slice. Serve with a crisp, dry Riesling or beer.

Thai-Style Tomato and Shrimp Salad

If you can't find Thai anise basil and Thai lemon basil, you can substitute Italian basil and lemon balm (the latter is available at farmers markets and specialty produce stores).

Hot-and-Sour Pumpkin Soup

Active time: 40 min Start to finish: 1 1/2 hr While you could make one without the other, Blue Ginger's shrimp toasts go so well with this flavorful soup that the two recipes function as a pair. We think of the combination as an Asian twist on soup and a sandwich.

Steamed Mussels in Thai Curry Sauce

"On a trip to the Northwest, I enjoyed dinner at Yarrow Bay Grill in Kirkland, Washington," writes Sue Eltringham of Prescott, Arizona. "I'm a big fan of mussels and was especially fond of their version, with coconut-curry sauce. I'd like to have the recipe so that I can enjoy it again before my next visit." Rich coconut flavor and just the right amount of heat make this starter special. A trip to an Asian market will likely yield most of the ingredients you need.

Java Chicken in Coconut Sauce

Complement the chicken with Aromatic Yellow Rice and haricots verts or other green beans, and offer a crisp Riesling or cold Asian beer to drink. Finish the meal simply with a platter of tropical fruit.

Coconut Chicken Soup

Green onions make all the difference in this new take on a popular Thai soup.

Cumin-Chipotle Ketchup

Perfect as a topper for steaks, burgers, pork chops, hot dogs and fries. For even more flavor, try brushing the tangy ketchup onto the meat during grilling. Can be prepared in 45 minutes or less.

Ambila Chicken

(Braised Chicken with Chilies and Chinese Long Beans) The intoxicating seasoning paste in this Eurasian stew may be used to flavor chicken, beef, lamb, or seafood.

Purslane, Meyer Lemon, and Pear Salad With Makrut Lime Vinaigrette

For this recipe, it's worth the effort to look for purslane at your local farmers market or specialty produce store. The salad green's fleshy texture and subtle citrus notes work well with the gentle flavors of Meyer lemon and makrut lime leaves.
