Spinach & Ricotta Gnocchi with Fontina Fonduta

These gnocchi are also called malfatti (which translates to “badly made”) or gnudi (which means “nude”) because essentially these are ravioli without the pasta—they’re naked! No matter what you call them, I ADORE these delicate little cheese dumplings. They’re little bundles of spinach and ricotta sitting on top of melted Fontina mixed with heavy cream, mascarpone, and egg yolks. A little bit of this dish goes a long way—right to my booty usually!

Tagliolini with Arugula-Walnut Sauce

I LOOOOOVE nuts. And this super-classic preparation, which is hugely flavorful and really easy to make, is all about them. I start by toasting and puréeing walnuts—both of which help bring out their flavor and natural fattiness. Combine them with some sharp cheese and spicy arugula, and you end up with a dish that’s luscious and palate cleansing at the same time.

Tagliatelle with Bacon, Sweet Corn, Burst Cherry Tomatoes & Arugula

Where I come from, corn is the epitome of a summer vegetable; we used to drive out to the fields to get ours fresh and just leave our money in a can on the side of the road. So in this dish I combine corn with lovely little cherry tomatoes sautéed until they burst out of excitement, letting their delightful juices flow! Add some bacon and this sauce just steps up, pokes you, and says, “Hi, I’m summer, glad to see you!”

Sugar Snap Pea Salad with Crispy Prosciutto & Mint

I love sugar snaps because they’re crispy, they’re crunchy, and they’re snappy! Just blanch, shock, and cut them into little slivers to enjoy the full sugar snappy experience. To keep things interesting, toss in some minty fresh deliciousness and some salty, crispy prosciutto! Now that’s what I call a summertime salad.

Grilled Soft-Shell Crabs with Asparagus, Arugula & Spring Onion Salad with Aïoli

When soft-shell crabs are in season, it’s the one time of year I like being crabby! I adore these guys perched on a delicious veggie salad with garlic mayo. The beauty of the soft-shell crab is you can eat the whole shootin’ match—on a salad, in a sandwich, however. Who says being crabby isn’t fun?

Grilled Sea Scallops with a Watermelon Three-Way & Dandelion Greens

I don’t think there’s anything terribly exciting about grilled scallops—but I do think you can put them together with interesting ingredients and make them exciting. That’s why I pair scallops with—wait for it—watermelon! I know, who would think of putting scallops with watermelon, let alone three kinds (watermelon, watermelon rind pickles, and watermelon radishes)? It may seem wacky, but the sweetness of the watermelon offset by the bitterness of the dandelion and the sharp red onion makes this a spectacular combo. And, if you’re thinking ahead (like we always try to do!), make the pickles a day (or a week) in advance and keep them in the fridge. These pickles make anything taste tangy and delicious; I keep a jar on hand for whenever a salad or sammie needs an extra little pickle-y punch!

Grilled Porcini with Poached Egg & Parmigiano

I am a huge fan of eggs—and I especially LOOOOOVE them when they’re served at a meal other than breakfast (though I love them for breakfast too!). There’s something elegant about putting an egg on a salad—and this particular salad combines the earthy meatiness of porcini mushrooms and the runny yolk of an egg, a combo that I think makes this a super-sexy appetizer or a lovely lunch.

Escarole Salad with Walnuts, Pecorino & Pickled Onions

Escarole is one of those greens I LOOOOOVE to use in a salad. It has a firm texture and an exciting flavor; to me it’s a sleeper hit. Whether you cook it or dress it with a nice bright vinaigrette, escarole stands up to whatever you dish out—it’s a green with a strong personality. Add a big ol’ acid punch with these onions, and this is what I call a party in your mouth.

Prosciutto-Arugula Breadstick “Brooms”

Who doesn’t love a breadstick? And a breadstick wrapped up with yummy stuff is even better. My recipe for homemade grissini (skinny little breadsticks) is really good, but as I always say, pick your battles. If you don’t feel like making them, go ahead and buy some packaged ones—I promise this will still be a crowd pleaser!

Peanut Slaw

Like reverse butterflies, when the showy yellow blooms of peanuts begin to fade, the peduncle bows to the ground and buries its head in the earth, forming the webbed cocoon-like shells this legume is known for. This slaw is a great one for picnics in the hot summer because it isn’t bound by mayonnaise. Chile, cilantro, and rice vinegar give it a fresh, spicy crunch that makes it the perfect peanutty partner for grilled chicken or pork.

Dandelion Cracklings

What a nickname, Good Donny. It’s a nickname most people couldn’t live up to. His grandkids gave him that one and nobody has found grounds to disagree. Like the name implies, he’s a good guy. Good Donny’s son, Benji, came by wielding some of the best pork cracklings we’d ever had. They were the perfect salty blend of tender, crisp, and crunch. Benji went on and on about how he had to beg Good Donny to give him just half a bag. Turns out that a friend of Good Donny’s makes them and this friend is getting on up in age, meaning every batch might be the last. You would have thought Benji was passing out gold doubloons. Next time we saw Good Donny we made a point to tell him how crazy we were for those cracklings. The following day, Donny showed up with five pint bags full of those golden crispy treasures. When Benji came by a few days later, my husband, Donald, retrieved a bag that he had hidden away. Benji was beside himself with envy.

Dumpling Soup

My favorite firework is the Friendship Pagoda. A little bright yellow house spins ’round like a top, emits sparks, and then up pops a pagoda and a little light glows within. My son Joe’s best first-grade friend is named Edison Seto. They make quite a pair. I love to see them out at recess walking with arms slung over each other’s shoulder. Joe has had friends, of course, before first grade, but they were all friends of the family. Edison is the first friend he has made on his own. It looks as if Joe is a good judge of character, for Edison is as sweet as can be. Edison lives in the family’s New Sunlight Market with his parents, grandparents, and tiny sister, Grace. Joe loves to play over at Edison’s. I would too; they get to ride their scooters up and down the aisles, snagging Little Debbie snack cakes for each lap. Edison’s family is from China and this has turned Joe into quite a fan of anything the slightest bit Chinese. This soup was inspired by their friendship and by the fine collard greens from the New Sunlight Market.

Chicory Salad with Coffee Molasses Vinaigrette

Chicory flowers are Aequinotales, meaning the flowers open and close at the same time just like clockwork. Here, that is from around six in the morning until the sun is high at noon. About the same time these blossoms are awakening, chicory roots blended with coffee are percolating across Louisiana. They make a fine combination. This dressing has the faintest sweetness of Louisiana molasses that works with the coffee to balance the bitter bite of the salad greens.

Baby Spinach with Beets and Goat Cheese

For as long as I can remember I’ve been awed by the almost jewel-like beauty of beets. When I was a kid I longed for a crayon that was the exact color of the beets we grew on the ranch so I could use it in all my drawings. I think this is why my mother never had any trouble getting me to eat them! I love beets in salads or on their own, simply drizzled with extra-virgin olive oil and a little fresh lemon juice.

Butterhead Lettuce Salad with Strawberries

Usually when I make a salad, I start with a base of greens—most often tender butterhead lettuce, my favorite—dress it with a flavorful vinaigrette, and then top it with whatever I have on hand. The combination in this recipe was one I tried once and loved so much that it’s become a staple at my house.

Grilled Shrimp on Arugula

This marinade is my favorite for shrimp, chicken, and flank steak or any other red meat. As with any marinade, the longer you let the shrimp or meat marinate, the better, but on many occasions I’ve had only enough time to throw it together and put it straight on the grill, and the results are still great.

Tortilla Soup

My friends request this recipe more often than any other. I am often asked if it’s a family recipe. I take it as a compliment that people always seem so surprised to hear that I found it in a magazine when I was about twelve years old. I’ve made it so many times since then and it has evolved into what it is today. I think it’s so delicious—and popular!—because of its clear but very flavorful broth. So often tortilla soup is heavy, but this one is hearty without being unpleasantly thick. In fact, I make such a large batch because everyone always wants seconds and thirds. On the rare occasions that I’ve had leftovers, I’ve discovered that the soup keeps very well, and even gets better, stored in a tightly covered container in the refrigerator. The garnishes keep well stored in zip-top bags; keep the fried tortilla strips at room temperature and everything else in the refrigerator. When serving the second day, just place all the garnishes at the bottom of the bowl and ladle the soup over. I use two kinds of dried chiles—ancho and pasilla—because they add more depth and smoky notes to the broth. Use more or fewer chiles depending on how strong you want their flavor to be. Kimchi

A staple on the Korean table, kimchi is a pickled cabbage (and sometimes radish) side dish that is pungent and spicy. Traditionally, it has lots of spices and takes months to make, carefully buried in the ground to ferment. Forget all about that . . . this is a kinder, gentler version. The first thing you need to do is buy a bottle of Momoya Kimchi Base, a sweet and slightly spicy red sauce that has everything in it already. Look for it at your local Asian grocer or online. Once you have it in the fridge, you’re set for a while—a little goes a long way. This recipe couldn’t be easier to make but the kimchi needs at least a couple of hours to do its work, so plan ahead. I use the kimchi in practically everything from a topping on burgers to a filling for quesadillas (page 23). Spoon the kimchi into butter lettuce leaves and sprinkle with chopped peanuts for an incredibly tasty and healthy snack.

Braised Collard Greens with Bacon and Soy Sauce

Collard greens with bacon or ham are a classic—spicy, smoky, and tender in an addictive savory broth. Most recipes splash in some vinegar to add a little tang and balance the bitterness of the greens. Soy sauce adds a different spin to this Southern staple. Try this alongside Thyme-Smoked Four-Inch Porterhouse Steak (page 168) or Whole Roasted Chicken with Plumped Raisins, Toasted Pine Nuts, and Arugula (page 142).

Swiss Chard and Caramelized Onion Panade

Panade sounds kind of “chefy” but in truth, the dish, made from crusty bread and lots of cheese, is just a cross between a savory bread pudding and holiday stuffing. When mixed with eggs and cream, the bread softens so it becomes almost soufflé-like, with pillows of puffy goodness infused with chard and caramelized onions. If something can be peasant food and elegant at once, this is it! Pair this as a side with Whole Roasted Chicken with Plumped Raisins, Toasted Pine Nuts, and Arugula (page 142) or serve it with a simple green salad, and you’ve got dinner.
