Herbs & Spices

Beet Carpaccio with Goat Cheese and Mint Vinaigrette

Thinly sliced beets (not beef) lay the foundation for this vibrant rendition of the Italian appetizer. Use any assortment of small beets — red, golden, purple, or candy-striped. A local farmers' market will have the best selection. The beets can be roasted and peeled one day before serving.

Saigon Beef

Rita Martucci of Wilmington, Delaware, writes: "Can you please get the recipe for the Saigon beef served at Zinc in New Haven, Connecticut?" Active time: 1 hr Start to finish: 1 hr

Skillet-Browned Potatoes with Fresh Dill

One way to cut down on holiday oven gridlock is to choose a side dish that can be made on top of the stove, like this one.

Cornmeal-Cookie Sundaes with Warm Fruit

Shrimp with Garlic and Toasted Bread Crumbs

Gamberi Aragonati Big shrimp crusted with garlic and crunchy bread crumbs were always a part of our family's Christmas Eve celebration. My father would peel and stuff pans full of fresh sweet shrimp, which would disappear faster than you can say Buon Natale! Easy to do, they are a pleasure to enjoy any time of the year. Don't forget the last squeeze of fresh lemon juice; it really brings out the flavor of the shrimp. Aragonati appears to be a dialect word for gratinati, meaning food that is baked under a browned crust. It has nothing to do with the herb oregano, though it is often misspelled oreganati.

Pineapple Glazed Ham

If you buy a boneless ham, you'll still have the same amount of meat to eat, about 10 to 12 pounds (because the bone accounts for about 4 pounds). The bottom line is that the recipe directions are the same, regardless of the cut of ham.

Fennel Slaw

"While driving along the California coast, we stopped at River's End, in Jenner," say Susan and Malcolm Duncan of Waco, Texas. "The fennel slaw was addictive, and we're not even fennel people. Do you think you could get the recipe?"

Shrimp Salad with Zucchini and Basil

Use packaged prewashed mixed baby greens to make this salad in practically no time. A chilled Sauvignon Blanc pairs well with the dish's fresh, bright flavors.

Goat Cheese and Asparagus Pizza

A lovely start to this spring supper would be mugs of green pea soup sprinkled with chives. Accompany the pizza with an arugula, radicchio and endive salad dressed with balsamic vinaigrette. Offer gelato for dessert.

Sweet-and-Sour Scallops

"Before we got married, my husband, Gregg, and I were working at a small restaurant, and it kept us ridiculously busy," writes Anita L. S. Eberhardt of Beverly, Massachusetts. "Now that we have both left the restaurant business, we have a much saner schedule, although raising two kids certainly keeps us busy. My experience as a professional cook makes it easier for me to throw together a quick meal, which is good because I'm not a convenience-food mom: I try to limit fat and salt, emphasize fruits and vegetables, and use a minimum of prepared foods." Serve with rice to soak up the flavorful sauce.

Fried Mozzarella with Anchovies, Capers, and Garlic Sauce

Alexis Walker of Corvallis, Oregon, writes: "After many attempts to get a reservation, we finally succeeded in dining at Genoa restaurant in Portland. It was definitely worth the wait. The fried mozzarella was a revelation. Would you ask the chef for the recipe?"

Tortellini with Fresh Sage Butter

You also can use this sauce with small ravioli or crescent-shaped agnolotti filled with pumpkin, cheese, or meat.

Fettucine with Smoked Salmon and Asparagus

A green salad is all you need to make this pasta — its creaminess sharpened with a touch of horseradish — into a complete dinner. When shopping, it's helpful to know that egg noodles are usually sold coiled into small nests.

Fresh Ricotta and Fava Bean Bruschetta

Slightly sweet, fresh ricotta, which can be found in many Italian markets, makes this starter especially delicious. Regular ricotta also works well.
