Strip the kale quickly by turning the leaf upside down, grasping the top of the stem with one hand, and wrapping the other hand around the stem just below. Pull the leaf down with your lower hand; it will easily peel away. Then, save time by preparing the tahini dressing as the seasoned potatoes roast in the oven.

Tom's Tasty Tomato Soup with Brown Butter Croutons
When I was a kid and my mom made tomato soup, she would cut buttered toast into squares and float them on top of each bowl. My twist on Mom's toast is to make brown butter croutons, though when I'm really feeling feisty I go all the way and make grilled cheese croutons to float on the soup.
To cut the bread for the brown butter croutons, take a 4-inch chunk of rustic bread (5 to 6 ounces) and cut off and discard the crusts using a serrated knife. Cut the bread into 4 slices, then cut the slices into 3/4- to 1-inch cubes.
White Bean Soup with Chive Oil
This creamy soup, served in tiny cups and bright with chive oil, is easy to make and serve. Kids will like the little cups and the crazy green swirl. Adults will appreciate the healthfulness and the flavor.
Chicken with Forty Cloves of Garlic
You will find that the garlic has been tamed in the cooking and acquired a delicious buttery quality. Serve with hot toast or thin slices of pumpernickel—to be spread with the garlic sauce.
Brain-Boosting Broth
This broth, the backbone of many of our soup recipes and an ingredient in many others, was developed with brain health in mind. It includes onions, fennel, parsley, oregano, and rosemary, all of which contain antioxidants, as well as parsnips, which are a good source of folic acid. The recipe uses water as liquid, but you can start with chicken stock or fish stock to make an especially flavorful broth that would be great for sipping on its own.
Frijoles de la Olla
Brothy Beans
"Sólo la olla sabe de sus frijoles" states the wooden sign hung on the wall of a fonda in Veracruz. "It is only the pot that knows its own beans." In homes and small fondas throughout Mexico, beans simmer in large ollas, bulbous-shaped clay pots, their earthy aroma filling the air. Traditionally, a smaller olla filled with water placed on top of the pot serves as both a lid and a way to heat the water that occasionally needs to be added to the beans. Fuel is often scarce and this is a practical way to conserve precious wood.
These brothy beans, cooked with lots of water and just a scattering of herbs, onion, and garlic, are the classic bean dish of Mexico. They are often served as soupy frijoles caldos, ladled into small bowls, the beans submerged in their broth, and offered toward the end of a meal so no one leaves the table hungry. Or, they are served as frijoles cocidos, the beans drained slightly to accompany grilled meats or tacos.
No matter whether the beans are cooked in an olla, Dutch oven, or other heavy pot, the procedure will be the same. All that needs to be adjusted is the length of the cooking time. The fresher the beans are, the less cooking time is needed, but 2 1/2 to 3 hours is a reasonable estimate, although 4 hours or more is not unusual.

Tomato Sauce
I make tomato sauce often. I make a batch to use that same night, and freeze what is left over to pull out and cook with when I want to throw something together quickly, like a grilled pizza or a pasta. A ricer or food mill is an inexpensive piece of kitchen equipment and there are many sizes. This is the best way to puree this sauce.

We have yet to come across a person who does not like butternut squash soup. Even staunch vegetable haters fall for it. (Maybe its sweet richness makes them think that it can't be healthy.) When it is on the menu at the restaurant, probably eighty percent of our customers order it, leaving the cooks to complain about how much they have to make. And if you peek through the kitchen doors, you will undoubtedly see one of us with a steaming hot bowl of it in our own grubby hands.

One look at these meatball subs and you might be inclined to bypass an entire summer's worth of burgers and dogs. Heroes, hoagies, subs, grinders—regardless of what you call them, we guarantee this recipe will be an instant crowd favorite thanks to toasted garlic-butter buns piled high with tender meatballs and tangy tomato sauce.
