Cured Meat

Cheddar Grits and Bacon Roulade

Here, the beloved grits of the South are baked into a tender, cheesy roll that embraces all the elements of a country-style breakfast. Just slice and serve.

Pork Cassoulet with Pork Confit and Winter Tomato Sauce

This traditional recipe calls for pork confit, which you'll need to prepare at least two weeks before making the cassoulet. The confit adds undeniable richness and authenticity, but a simpler recipe (using country-style spareribs instead) appears in "Top Trends: The Hot Ten" in the January 2006 issue of Bon Appétit.

Linguine with Pancetta and Sauteed Cherry Tomatoes

Gerald Colapinto of Corona, California, writes: "My grandparents were born in Italy and were wonderful cooks, so I'm partial to Italian food. I especially love the cooking of Southern Italy. Fortunately, I often travel to Rome on business. Back home, I like to re-create the dishes I discovered."

Kale with Garlic and Bacon

Shredding the kale allows you to cook it for a shorter period of time, so it retains an appealingly bright color and is gentler in flavor than if it had been slow-cooked.

Onion and Bacon Tart

Every visitor to Paumanok Vineyards enjoys a warm welcome from owners Ursula and Charles Massoud. She learned viticulture in her parents' vineyards in Germany; he taught himself to make wine when his job with IBM took the family to the Middle East. Ursula, who is known for her outstanding comfort food, pairs Paumanok's semi-dry Riesling with an onion tart she makes at harvest time. "It's traditional in my hometown to serve it when the Riesling juice is still fermenting. The sweetness of the onions matches the sweetness of the new wine."

Bay Scallops and Applewood Bacon with Port Reduction

If you can't get Nantucket bay scallops, you can use other bay scallops or sea scallops (cut lengthwise into thirds).

Venison Daube with Cumin and Coriander

The Lenz Winery, one of the oldest on Long Island, has had the same winemaker, Eric Fry, since 1989. Fry's mantra is "Ripe fruit!" — and hows in the Lenz Cabernet Sauvignon. The wine has an amazing concentration of flavors, an intense raspberry and black-cherry nose, and smooth tannins that provide a long finish. In short, it's a perfect partner for Fry's deeply flavored venison stew. In this satisfying harvest dish, venison is browned, then oven-braised in wine. Fry puts any leftovers on a roll for lunch.

Parmesan-Stuffed Dates Wrapped in Bacon

We modeled these hors d'oeuvres on the little bombs of flavor that Suzanne Goin invented for her Los Angeles restaurant A.O.C. Each bite delivers a huge range of tastes — sweet, salty, and smoky — all at the same time. They're easy to make and completely irresistible; I can't think of a more appealing tidbit to nibble on.

Eggs Carbonara with Basil and Parmesan

Michele Verdi-Knapp of Fort Lauderdale, Florida, writes: "The best eggs I have ever tasted were at Seven Gables Inn in Pacific Grove, California. Thank you for the recipe."

Sage and Pancetta Biscuits with Fontina Cheese

These make a lovely breakfast or side dish.

All-Day Breakfast Sandwich

This sandwich includes the main components of a traditional Irish all-day breakfast — bacon, eggs, and sausage.

Ziti with Roasted Peppers, Green Olives, and Spicy Salami

Think of this flavorful medley as an antipasto pasta. Add sides like tomato bruschetta and a romaine-radicchio salad for a fantastic summer supper. What to drink: A bold Sangiovese or Rioja.
