Grilled Swordfish with Pineapple Plantain Chutney
At The Great House at Villa Madeleine in St. Croix, they often use a native fish called wahoo for this interesting dish, but swordfish is another nice choice. They also make the chutney with the very hot Scotch bonnet pepper. A serrano chili produces a slightly milder version.
Crab and Corn Pudding
In the early days of California cooking, savory puddings were often served, a reflection of the fact that eggs and dairy have historically been mainstays of the state's agriculture. That was a legacy from the mission padres who, in addition to growing field crops such as corn and beans, usually kept cows and chickens to help feed their communities. In Northern California, Dungeness crab season begins around the first of November. The crab lends rich taste and nice texture to the first-course pudding.
Red Snapper Veracruzana
Red snapper is the fish of choice in Veracruz, Mexico, where this dish originated. The combination of the cinnamon, olives, capers, and peppers gives the sauce heat and depth.
This is a quick, light dish, good with boiled potatoes and rice.

Gai Pad Bai Gaprow
(Chicken Stir-Fry with Holy Basil)
Two of the common types of basil used in Thailand are now available in North America. Bai horapha tastes like a good strong Italian sweet basil and can be found in Asian markets and some supermarkets, usually sold as Asian basil or Thai basil.
The basil traditionally used in this recipes is bai gaprow, or holy basil which can be harder to find because of its shorter shelf life. Holy basil hasn't much taste when raw, but when cooked it becomes strong and distinctive. Asian basil makes a very good substitute, though it can't be cooked as long or it will lose flavor.
Toasted Jalapeño Corn Bread
Jalapeño chilies give this a nice spicy kick. An accompaniment to Chicken Chili Verde .
Garlic Shrimp
Shrimp in a garlicky sauce is a classic— and a classically simple— Spanish tapa. It is usually cooked and presented in individual shallow earthenware casseroles, but it can just as easily be made in a larger casserole or skillet. Offer crusty bread alongside.
Grilled Swordfish Verde
The verde on the succulent swordfish comes from the cilantro and chili marinade and a silky avocado mayonnaise. Start out with salsa and tortilla chips, and serve Mexican beer throughout the meal.
Grilled Pork Chops with Anise-Seed Rub and Mango Mojo
Our Cuban-style mango mojo could enhance any grilled meat, as could the anise-seed rub. Adding our grilled asparagus and herbed bulgur creates a well-rounded meal, but rice and green beans or broccoli would also work.
