Buttermilk Pancakes with Caramelized Bananas

This recipe comes from the Old Rittenhouse Inn in Bayfield, Wisconsin.

Ginger-Lime Coconut Cake with Marshmallow Frosting

A buttermilk layer cake is filled with ginger-scented lime curd, then finished with a sweet and fluffy frosting. Make the lime curd one to two days before assembling the cake.

Fried Chicken Drumsticks with Cumin Salt

This recipe makes very dark, mahogany-colored drumsticks. Can be prepared in 45 minutes or less.

Crackling Corn Bread Dressing

Put the dressing in the oven as soon as the turkey comes out to rest before it's carved.

Buttermilk Bran Muffins

These bran muffins bake up moist and chewy. They're so good that my in-laws, Reed and Nancy, make a batch every couple of days for snacking. This is another recipe that shows how buttermilk works to tenderize and lighten many baked goods. Bran retains much of its natural oil and can quickly turn rancid, so always store it in the refrigerator or freezer. I like to use unprocessed sugar crystals (don't confuse this with brown sugar) to complement the bran's whole grain taste. Each muffin has over 2 grams of fiber.

Irish Soda Bread with Raisins and Caraway

Patrice Bedrosian of Brewster, New York, writes: "In the days that followed September 11, 2001, I — like so many Americans — gravitated toward roast chicken, meat loaf, and anything that brought comfort and ease to my home. You see, my stepbrother, Jerry O'Leary, a 34-year-old chef working at Cantor Fitzgerald's corporate dining room in One World Trade Center, was among the many victims on that terrible day. "I feel quite certain that Jerry's love for cooking stemmed from his mother, Julie Lestrange. And as long as I can remember, she has always had something delicious waiting for my family whenever we visit. "I would like to share a recipe that Julie has given to me. My hope is that you will, in turn, share it with my fellow readers, encouraging them to enjoy this delicious and comforting Irish bread, to smile, and to remember the love between a mother and a son." Offer this easy-to-make bread with plenty of butter and your favorite jam.

Buttermilk Cupcakes with Two Frostings

If making these cupcakes for a large crowd, do not double the recipe but make multiple batches.

Low-Fat Herbed Ranch Dressing

Can be prepared in 45 minutes or less.

Vanilla-Citrus Tea Ring

Serve this tender, moist Bundt cake with the Strawberry-Rhubarb Compote , vanilla ice cream, or just on its own. Decorate with whole strawberries, if desired.

Mango Lassi

In Indian restaurants, lassi is served with the meal, but we frequently find this exotic "smoothie" too filling to accompany a main course and prefer it in place of dessert. Look for the smaller, yellow-skinned mangoes, which have a more pronounced flavor than the larger, red and green ones.
