Bell Pepper

Gazpacho Cordobes

"My grandmother, who was a successful restaurateur from C″rdoba, Spain, hesitantly relinquished her gazpacho recipe to me," says Lawrence Saez of San Francisco, CA. This nourishing cold soup is ideal for a hot summer day and is best enjoyed with a glass of Manzanilla Sherry.

West Indian Beef Stew

Naomi Wagman Kirstein of Danvers, Massachusetts, writes: "I would love to have the recipe for the West Indian beef stew served at The Golden Lemon Inn & Villas on St. Kitts, in the West Indies." The green olives in this recipe cut the richness of the stew by adding a slightly pungent flavor.<

Gingery Sweet Pickled Vegetables

I first tasted this Cantonese pickle in a commercial version that I bought in Seattle's International District. The pickle contained stem ginger, in thick pieces so tender that you could eat them right along with the other vegetables. If you happen to grow your own ginger, by all means use the stems in this recipe. Otherwise, include the ginger just as a flavoring. The children who have tasted this pickle love it just as much as the adults do.

Red Bell Pepper Sauce

This bright, piquant sauce is also delicious spooned over sautéed chicken, fish, or steak. This recipe is an accompaniment for Cheese- and Shrimp-Stuffed Roasted Poblanos with Red Bell Pepper Sauce.

Braised Rabbit with Olives

A 3 1/2-pound chicken works well, too, in this dish from Syracuse.

Broiled Chicken and Roasted Pepper Sandwiches

Why not grill the chicken and bread for this sandwich instead of broil them? Laura Ortega, who lives and cooks in the land of air conditioning— in Palm Desert, California— told us that it's far easier (and cooler) for a quick lunch to turn on the broiler than fire up the grill. Suit yourself! Either broiled or grilled, these ingredients make for a delicious sandwich.

Grilled Vegetable Salad with Greens, Tomatoes, Herbs, Olives and Cheese

For this fabulous salad we used red onions, beets, zucchini, eggplant, and bell peppers, but any mix of summer vegetables would work. The salad gets served with grilled bread and is nice with a white wine, like Sauvignon Blanc.

Potato, Spinach and Red Bell Pepper Salad with Warm Bacon Vinaigrette

Not to worry: There's just enough bacon in the snappy dressing to add flavor but not much fat to this colorful salad. Serve it alongside grilled chicken or fish for a healthful summer dinner.

Penne with Turkey and Wild Mushrooms

This recipe can be prepared in 45 minutes or less. This spicy pasta dish is a real treat for mushroom lovers. Use as many different varieties as you can find.

Quick Chicken and Olive Empañadas

These crisp turnovers are traditionally enclosed in pastry dough. Making and rolling out the dough can be quite time-consuming, so potsticker wrappers are used in this recipe instead.

Halibut and Red Pepper Skewers with Chili-Lime Sauce

For this simple—yet boldly flavored—entrée, tuna or sea bass can be substituted. Chilies in the sauce add nice heat.

Potato Salad with Fresh Herbs and Lemon

Just a few ingredients are all it takes to prepare a wonderful side dish that's great for any time of the year.

Arroz con Pollo

'50s I LOVE LUCY When Ricky and Fred switch roles with Lucy and Ethel ("Job Switching" first aired on September 15, 1952), Ricky decides he wants to make his native Cuban arroz con pollo for dinner. You know there's going to be trouble when Ricky asks Fred if a pound of rice per person sounds right — and sure enough, before long, mountains of rice are bubbling out of a pot, and chicken is exploding from a pressure cooker. Here's a tamer approach. Active time: 1 1/4 hr Start to finish: 2 1/2 hr

Summer Vegetable Tart

Sautéed vegetables are piled atop a creamy goat cheese-custard filling.

Grilled Tuscan Pork Rib Roast with Rosemary Coating and Red Pepper Relish

This technique works best with a charcoal grill, but you can also use a gas grill as long as it has a built-in thermometer or a hole in the top for inserting the candy thermometer.

Composed Greek Salad

Donna Knowlton of Atlanta, Georgia, writes: "As the oldest of five children growing up in rural West Virginia, I was always helping in the kitchen. My husband is a doctor and works long hours, but we still like sharing a meal at the end of the day. I don't want to be in the kitchen late at night making something complicated, so I rely on dishes that can be ready in minutes." Donna brought back this version of the classic recipe from a trip to Athens.
