Apple-Ginger Sorbet
Few folks are as opinionated about all things apple as Frank Browning, whom I’ve dubbed the Apple Autocrat. Frank grew up on an apple farm in Kentucky, which nurtured his headstrong, southern-style convictions regarding apples. He offered this recipe from An Apple Harvest, which he cowrote with Sharon Silva, but absolutely insisted that I make it only in the fall, when good-tasting, red-skinned apples are in abundance. So wait I did. Okay… I didn’t wait. But please don’t tell Frank. I made this during the spring using Jonagold apples, which worked great. And although Frank insisted I use Gewürztraminer, I made it with a dry Riesling instead (blame my rebellious Yankee spirit). So feel free to use any tasty, red-skinned apple, but don’t use bland Red Delicious ones, or you might get yourself a Kentucky-style comeuppance.
Green Apple and Sparkling Cider Sorbet
I was toiling away years ago in a restaurant kitchen when one day a celebrity chef stopped by who had a reputation for being rather, um, obnoxious. I was minding my own business, caught in a Zen-like state while peeling a case of apples and, naturally, generating a huge pile of peels, which I tossed into the garbage as I went. He walked by, looked in the garbage, and reprimanded me: “Don’t you know you’re throwing away the best part?” My infamous sarcasm got the best of me, so I offered to wrap them up for him to take home. From the look on his face, I’m sure it was that moment that effectively killed my professional television cooking career. All kidding (and sarcasm) aside, the peelings do indeed have a lot of flavor, so I include the peels when infusing the apples in this sorbet. Hopefully, this recipe will make amends to the offended party and soon you’ll see me peeling away on prime time.
Walnut and Apple Bread Pudding
Apples and walnuts ripen at about the same time, and are often grown in the same region. Pair them with a crusty, rustic loaf of bread, some spices, milk, and eggs, and you’ve got a perfect dessert for a fall afternoon. Puddings and bread puddings are particularly easy to make in a slow cooker, and the results are nearly always perfect.
Baked Apples with Ginger, Dates, and Walnuts
There are a lot of rather timid recipes for baked apples out there, but this one, packed with spicy ginger and sweet dates, is a twist on the usual homey fare. It’s a dessert that pleads to be topped with a scoop of ice cream that will melt from the warmth of the fruit. These apples also make an eye-opening breakfast when you’re weary of the same old eggs-and-toast routine. If you’re anything like me, you’re not at your peak in the morning, so bake them the night before, then rewarm them while the coffee is brewing. At breakfast, ice cream is optional.
Apple-Pear Crisp with Grappa-Soaked Raisins and Polenta Topping
I’m a big fan of fruit crisps. When I worked at Chez Panisse, I learned I wasn’t alone—they were more popular than our signature dark chocolate cake. But I’m not entirely convinced that I’d choose a fruit crisp over chocolate cake. Maybe I’d order both in the name of research. This fruit crisp topping, made with crunchy polenta, stands up well to the juiciest mélange of fruits. Here, I mix apples and pears, and it may seem like a lot of fruit when you’re doing all that peeling and slicing, but it cooks down considerably during baking. Use a good baking apple, such as Gravenstein, Winesap, Pippin, Northern Spy, or Cortland.
Apple–Red Wine Tart
This is an unusual tart. Not just for its brilliant red color, but for how it takes people by surprise when it’s turned out onto a serving platter. Be sure to plan in advance, as the apples really benefit from marinating in the red wine for at least one day, although two days of steeping gives them the best color. You’ll find the tart worth the wait.
Apple Tart with Whole Wheat Puff Pastry and Maple-Walnut Sauce
If you’ve never had whole wheat puff pastry before, you’re in for a treat. While many people love the taste of the buttery layers of traditional puff pastry, adding whole wheat flour gives it a hearty, nutty taste that I find especially appealing when paired with apples. I also reason that the whole wheat balances out what some might consider an injudicious amount of butter in the dough. This is a quick puff pastry, adapted from a technique I learned from Linda Zagula, that takes a fraction of the time and work required to make the traditional kind. It still takes six turns to roll it out, but you do the first four all at once, then the last two later. And the pastry recipe makes enough for two tarts, so you can wrap the extra piece and stash it away in the freezer, ready for the next tart.
Apple-Quince Tarte Tatin
I love a good, classic version of tarte Tatin, the famed French caramelized-apple tart, as much as the next guy—probably even more. But adding slices of quince makes this variation extra inviting to me. If you’re unfamiliar with quince, a cousin of the apple, it’s likely because they’re inedible in their raw state, so they tend to get neglected by folks who don’t know about the seductive, beguiling flavor that’s coaxed out of them by cooking. Like apples, quince are in season in the fall, and they’re easy to find by following your nose; when they’re ripe, their scent is rather intoxicating. I often keep a bowl of them on my dining table to perfume my entire apartment.
Buckwheat Cake with Cider-Poached Apples
This cake always reminds me of my trips to Brittany, an exceptionally beautiful region in western France that borders the Atlantic Ocean. The often-blustery weather is the only thing that stands in the way of Brittany becoming a major tourist destination. Aside from the chilly climate, the region is famous for its hand-harvested sea salt and salted butter caramel, both of which I would travel to the ends of the earth for. And no matter where you go in the region, you’ll find buckwheat being served in various guises, from griddled galettes to kig ha farz, a local curiosity made by poaching a pasty buckwheat batter in the sleeve of a linen shirt until it’s firm. Then it’s rolled on the counter until it breaks into tiny bits, like buckwheat couscous. They say it’s something that you need to be Breton to enjoy, so I must have some Breton in me since I loved it since the first time I tried it. I’m happy to have this cake in my repertoire because I enjoy the hearty taste of buckwheat in my desserts, too.
Lágrimas de La Virgen
The literal translation of the name of this drink is “the Virgin’s tears,” as the red color of the beets resembles tears of blood said to have been shed by the Virgin Mary. This beverage originated in the state of Guanajuato, maybe as long ago as the end of the sixteenth century. I found a few different variations, but this one seemed to be the most common, and it’s quite special. Although this beverage is customarily prepared during Lent for the festivities of Friday of Sorrows (the Friday before Good Friday), it’s a wonderful drink during fall, when beets and apples abound. This recipe makes a large batch to share at your next gathering.
Granizado de Queso con Manzanas y Piloncillo
Whenever I create a new dessert or want to reinterpret a classic one I am often inspired by other cuisines. During a visit to Italy I had a ricotta cheese granita and, although I have never seen one in Mexico, it inspired this raspado. I’ve incorporated apples, which are a classic pairing with cheese, to make a raspado that is unusual and unexpected—but certainly very, very tasty.
Apple Walnut Crumble
This apple crumble is the ultimate healthy-eating comfort food. Together the warm cinnamon apples and the rich walnut topping can’t be beat. Combining apples of mixed texture works best. A firm variety such as Golden Delicious will retain its shape and texture while a Cortland will lend itself beautifully to producing a thick, delicious sauce.
All-American Apple Pie
Here’s a picture-perfect apple pie—filled mile high with juicy apples. Sprouted spelt flour makes the crust unbelievably flaky and easy to work with. Serve it hot with a generous helping of vanilla ice cream and listen to the raves. For a vegan version, use butter substitute instead of butter, and serve with Soy Vanilla Ice Cream (page 83).
Guilt-Free Shredded Apple Pie
This refreshing apple pie is made with enzyme-rich raw apples and contains no fat. Completely fat-free, dairy-free, egg-free, sugar-free, and wheat-free—it’s totally guilt-free.
Spiced Pumpkin Apple Cupcakes
This is favorite autumn recipe that I like to serve at Halloween or Thanksgiving get-togethers. The little ones just love these moist, spicy cupcakes. They’re delicious with fat-free yogurt frosting, too.
Cinnamon Apple Crumb Bars
A cross between apple pie and crumb cake, these cookie bars are perfect for parties, picnics, and crowds, and a great addition to any cookie platter. For the best taste and texture, I recommend you use any combination of Macintosh, Cortland, or Golden Delicious apples for the filling.
Sunrise Carrot Muffins
These muffins are loaded with good-for-you veggies, fruits, and seeds—and they’re vegan, too. The silken tofu replaces the dairy and eggs, and adds moistness and protein for a tasty breakfast or afternoon snack.
Baked Apples Filled with Dates and Pecans
When I told my friend about this baked apple dish, he said it reminded him of an old folk recipe. When he was little and had an upset tummy, his Russian grandmother would cut up an apple and leave it out on the counter for a few minutes, until it began to brown. His grandmother would then say, “Come eat, tatellah” (an affectionate way of saying, “little man” in Yiddish). Lo and behold, a few minutes later his stomach felt better. He always figured it was love at work (and, of course, it was), but years later he found out there was also some science involved: As they brown—or cook, in this case—apples release pectin, which naturally soothes the belly. Baking makes the pectin and the rest of the apple easier to digest. In this recipe, the apples are complemented by a whole host of tasty morsels and spices—toasted pecans, dates, orange zest, and cinnamon—and as they bake, they smell heavenly.
Cranberry Apple Pie
As a Cape Codder, I’m crazy about cranberries. And “apple” was my son Lennon’s first word, so you know how we feel about them in our house! This pie is the perfect combination of tart and sweet. It is an ideal dessert to end any holiday meal. It is extremely pretty, with its tiers of fruit and deep golden crust. Look for firm, sweet apples to balance the tartness of the cranberries. I like Braeburn, Fuji, or Jonagold. To make this dessert completely refined sugar–free, double the proportions for the Single Flaky Sucanat Pie Crust recipe (page 130) and roll out as instructed below.
Maple Apple Crumble
This crumble is one of the best comfort foods I’ve ever tasted. My kids give it “Two thumbs up, and two big toes up!” As an added bonus, it’s made with fresh fruit, no refined sugar, and protein-rich, fiber-rich quinoa flakes. We eat this for breakfast, at teatime, as dessert, and any time in between.
