Anaheim Chile

Smoked Vegetable Salsa

If you have a gas grill and want great smoky flavor, soak hickory-wood chips in water one hour. Drain well; place chips in a disposable aluminum pie pan directly over flames (or over lava rocks if they are part of the grill's design). Allow chips to begin smoking, then grill vegetables until tender. This recipe is an accompaniment for Spicy Barbecued Rib-Eye Steaks with Smoked Vegetable Salsa .

This recipe originally accompanied Grill-Roasted Brined Turkey with Anaheim Chile Salsa Verde . This beautiful, mild-flavored green salsa may be served heated or at room temperature. For the brightest green color possible, add the cilantro just before serving.

Ye'abesha Gomen (Collard Greens)

Grilled Corn with Green Chili and Cheese Butter

To make this recipe even easier to prepare, substitute three tablespoons diced canned green chilies for the fresh Anaheim chili.

Nam Prik Num

(Charred Chili Salsa) In Thailand, vegetables are grilled in a grilling rack over an open flame. The method for charring described in this salsa recipe uses a dry-frying technique; you can, of course, char the vegetables over a grill instead. This northern Thai salsa is quite hot: The main ingredient is traditionally num, a long, medium-hot, pale yellow chili very similar to the banana chilies available in North American. If you want a milder taste, substitute Hungarian wax chilies for some or all of the banana chilies called for in the recipe. Remember that this sauce is meant to accompany sticky rice, not to be eaten on its own, so its flavors are punchy, with a distinct smokiness. Can be prepared in 45 minutes or less.
