Sausage-Stuffed Acorn Squash with Molasses Glaze
The German settlers in Philadelphia were known for their sausage-making talents. In this side dish, sausage teams up with molasses and squash, two classic Colonial ingredients. Be sure to select squash that are no bigger than four inches in diameter so that they will fit in a single layer in the baking dish.
Roasted Golden Nugget Squash
Golden nugget squash, also known as small Oriental pumpkin, has orange-colored skin and resembles a slightly flattened ball not deeply furrowed like acorn squash.
Sherried Winter Squash Bisque
Other varieties of sweet yellow-fleshed winter squash-such as acorn squash-are perfect for this soup. Nonfat milk and vegetable broth keep the soup low in fat, but also give it a surprisingly velvety texture.
Beet Soup in Roasted Acorn Squash
The roasted acorn squash tastes fabulous when scooped up with spoonfuls of the beet soup. But if oven space is limited, simply serve the soup in bowls.
Winter Squash Soup
A mix of butternut and acorn squash makes this soup silky and flavorful. Keep it bubbling on the stove to warm up any roaming ghosts and goblins as they return home from their Halloween rounds.

Baked Acorn Squash
While I was growing up, my mother was very good about cooking food she knew I liked (I was such a picky eater). That's why I found it inexplicable that she kept making baked acorn squash, which I considered, at best, repulsive. Once she wouldn't let me leave the table until it was all gone. No surprisingly, we sat there all night!

Spiced Squash and Maple Purée
The sap of maple trees was being used by Native Americans when the very earliest European immigrants arrived. Then it was an all-purpose seasoning, like salt, enlivening the austere diet. Now, with the refinement achieved by boiling and concentrating the flavor of the sap, maple syrup is a uniquely American sweetener. Here it adds just the right subtle note to a colorful puree of butternut squash.
