Fish with Herbes de Provence
The term herbes de Provence refers to the mix of herbs commonly used in southern French cooking. These include basil, thyme, chives, oregano, sage, rosemary, lavender, and dill, and can be used in almost any combination. You can purchase a premixed jar of herbes de Provence and use that in place of the herbs designated in this recipe. Any white fish tastes great in this dish. Try this with cod, sole, roughy, or snapper.
Cajun Fish
In America, we’re accustomed to eating sweet potatoes candied with maple syrup and brown sugar, or even topped with marshmallows, for a supersweet Thanksgiving side dish. But savory sweet potatoes are another experience entirely. Sweet potatoes with Creole seasoning are fabulous, and with this recipe they’re very easy to make. Any Cajun or Creole seasoning mix from the grocery will do, or make your own by mixing equal parts paprika, salt, and a dash of cayenne. Be careful with the cayenne, as a little goes a long way. Beets make a delicious red substitute for tomatoes if you can’t find good fresh ones for this dish. If you prefer white potatoes, feel free to substitute a large baking potato for the sweet potato. Frozen green beans are a quick solution when you want something green to toss into a pot meal. Simply shake some beans into the pot, reseal the bag, and keep it in the freezer. A single bag can often last for quite a few meals.
Boo-yah Bouillabaisse
French-food lovers, fear not the long list of steps and ingredients for this traditional dish. It’s easier than you think. Many of the ingredients are probably already in your pantry, and the rest can easily be found in your local grocery store. The key to great bouillabaisse is fresh seafood. We’re talking fresh-from-the-sea fresh, not Joe’s week-old specials. Nothing spoils a fish-based stew like subpar fish. Get to know the person at the fish counter and find out what’s fresh that day. In fact, ask to sniff the fish before they wrap it up for you—you want it to smell like the sea. Much like paella, this dish has very flexible ingredients. It’s part of the fun. Plus, you’ll be amazed at how quickly and easily it comes together. It’s time to start a French revolution—in your kitchen!
Pimpin’ Paella
No special equipment needed here. Leave the paella pan at the store and let your casserole dish do the work. Packed with fresh seafood and accentuated with the alluring flavor of saffron, your kids may call this pimpin’ dish “The Bomb,” which means it’s good. This dish lives or dies by the freshness of the fish. The beauty of paella is that it is a flexible dish, so talk to your local fishmonger to get recommendations on the best catch of the day. If you don’t like seafood, the dish actually works really well without it, too.
Beef Burgundy
This delicious, classic dish from the Burgundy region of France is designed to showcase the wines for which the area is famous. (We like anything that celebrates wine. Oui, oui!) Beef Burgundy can appear at first glance as a mere stew, but those of us who have had the pleasure of making this dish know that during the hours it slowly cooks in the oven something magical happens. The flavors of the broth are intensified by the wine, and it thickens into a velvety smooth sauce. Once finished, the cuts of beef are so tender they almost seem to melt. Traditionally, Beef Burgundy is made with wine from the French province of Burgundy. If you have trouble finding a true Burgundy (they can be pretty pricy!), the best substitutes are Pinot Noirs from California or Oregon. We suggest serving this over our Perfect Rice Every Time (page 195) and with our Rockin’ Tomatoes Rockefeller (page 139).
Osso Bucco Fit for a Queen!
Put some lovin’ in your oven! This fabulous dish gets its rich flavor from slowly brazing the veal until the meat is so tender, it literally falls off the bone with the touch of your fork. As it cooks, the aromas of the fresh herbs, earthy vegetables, and wine fill the kitchen. In fact, you may have to keep yourself busy by reading this cookbook until the timer goes off , lest you dig in before it’s done. Seriously, if you have never tried osso bucco, this is your chance! It takes a little more time—and expense—to cook than other dishes, but it’s completely worth it. Traditionally osso bucco is served over risotto, but we like it best over a bed of mashed potatoes or cooked white rice. So go ahead and treat yourself, you deserve it. If you’re not keen on veal, you can use lamb instead.
Cannellini Beans with Pancetta & Rosemary
I don’t know if my love of beans comes from living in Tuscany or if I was Tuscan in another life, but I adore beans. And when I want a stick-to-your-ribs side dish, I immediately think of Tuscan white beans. They’re creamy and delicious, and they say, “Put me with pancetta!” And I say, “Sure, I’d be happy to.” Then I toss in a bit of rosemary (but sage would be SOOOOO good here too!) and serve these with a yummy porky main—or just on their own for lunch.
Yellow Squash Soup with Lemon
When I was a kid we grew all our own vegetables, especially calabasa, or squash. LOTS of squash. To be honest, I got a little sick of it (don’t worry—my mom already knows). Then I grew up and figured out a few surefire ways to show off the delicious earthiness and sweetness of summer squash. This soup is one of them; the lemon gives it great tang and the soup is unexpectedly creamy, even though there’s not a bit of cream or milk in it. Be sure to puree this soup in batches—don’t pour the soup over the level of the top of the food processor blade. This soup is brothy before it’s pureed, and it’ll seep out of the work bowl and all over the counter if you’re not careful.
Almond Braised Lamb Shanks with Toasted Almond Salad
This out-of-the-ordinary stew is seriously good and its enticing aroma seductive. The sauce is smooth and complex: cinnamon, mustard, cumin, fenugreek, and cardamom all add up to an intriguing flavor that really lingers. The parsley-almond garnish adds brightness to the dish. Sweet, nutty, and crunchy, with layers of Indian spices, this killer recipe is a musttry. Serve it over basmati rice.
Choucroute Garnie 1-2-3
Choucroute garnie traditionally combines sausages and thick chunks of bacon with larger cuts of meat like smoked pork chops and even hunks of pork shoulder. This faster version includes only sausages and bacon. The grated potato adds body and silkiness to the sauerkraut, which, if not homemade (see page 143), should be purchased refrigerated (not canned).
Pot Roast with Gravy
Marie called most any dish that she added wine to “French,” and her French pot roast was a star of the genre. The paprika and bell pepper are additions from the late writer Laurie Colwin, who along with Marie would top my list of people to eat pot roast with.
Hard Cider–Braised Pork Shoulder
Pork shoulder is my hands-down favorite cut of meat. Studded with garlic, it makes a succulent roast for dinner with enough for sandwiches the next day; and braised with a few flavorful ingredients, it creates its own sauce. Hard cider brings acidity to the sweetness of regular cider and apples.
